Categories     Side Dish

Time 25m

Number Of Ingredients 7

1 lb green beans
½ tbsp white sesame seeds
1 tbsp avocado oil
½ tsp coarse sea salt (plus more to taste)
0.6 oz garlic cloves (minced about 3 large cloves)
½ tsp toasted sesame oil
1 tbsp coconut aminos

Steps:

  • Trim the green beans. Rinse and pat dry with a clean towel.
  • In a large stainless steel or cast iron skillet, toast the sesame seeds with no oil over medium-low heat until golden brown, about 30 seconds. Toss the skillet often so as not to burn the seeds. See them aside.
  • Use the same skillet and turn the heat up to medium-high. The pan should feel pretty warm when you place your palm near the surface, about 2-3 inches away. Spread the beans in a single layer without oil. Do not disturb for 3 minutes then toss every 3 minutes or so to char and blister the beans. You should see the skin turn wrinkly and with some charred spots, about 6 minutes total.
  • Add the avocado oil, stir-fry for 2 minutes with salt.
  • Add the garlic and sesame oil. Sauteing and tossing for 1 minute.
  • Add the coconut aminos. Keep tossing for 1 more minute.
  • Turn off the heat. Transfer the beans to a serving plate. Taste and season with more salt, if needed. Sprinkle toasted sesame seeds over. Serve at room temperature.

'CHINESE BUFFET' GREEN BEANS

'Chinese Buffet' Green Beans image

Every time my family and I go to a Chinese buffet we make a bee line for the green beans! This is a simple and tasty re-creation of that much loved side dish, goes well with any Asian meal. Make sure to slice the garlic, don't use a garlic press. Oyster sauce can be found in the Asian section of your grocery store, at an Asian grocery store, and online.

Tips:

- To ensure your green beans remain vibrant and crisp, blanch them in boiling water for 3-5 minutes before stir-frying. Immediately transfer them to an ice bath to stop the cooking process and preserve their color. - Cut the green beans into uniform sizes to ensure even cooking. Using a sharp knife will result in clean cuts and prevent the beans from becoming bruised or damaged. - Use a well-seasoned wok or large skillet to stir-fry the green beans. This will help distribute heat evenly and prevent sticking. If you don't have a wok, a large nonstick skillet will suffice. - Heat the oil over high heat until it starts to shimmer. This will help sear the green beans and lock in their flavor. - Add the garlic, ginger, and chili peppers to the hot oil and stir-fry for a few seconds until fragrant. This will infuse the oil with flavor and create a flavorful base for the green beans. - Add the green beans to the wok and stir-fry for 3-4 minutes, or until they are tender-crisp. Be careful not to overcook them, as they will become mushy. - Season the green beans with soy sauce, rice vinegar, and sesame oil. Stir-fry for an additional minute to combine the flavors. Serve immediately.

Chinese-style dry-sauteed green beans is a quick and easy dish that is packed with flavor and nutrition. The key to this dish is to use fresh, high-quality green beans and to cook them quickly over high heat.
