This easiest meal ever! Combine rice and Chinese sausage in a rice cooker and hit the 'cook' button. The sausage and rice will be done at the same time (and the flavors/juices from the sausage will be infused into the rice, super onolicious).

1 *cup uncooked rice (I use Japanese short grain or long grain jasmine)
4 lap cheong links

Steps:

  • Directly in the rice cooker pot, rinse the rice several times in water until the water runs almost clear. Fill with water to the "1 cup rice" line.
  • Lay the lap cheong links on top (you can slice the links to make it fit nicely). Cook the rice as you would normally cook a cup of rice in the rice cooker. Once it's finished, both the rice and lap cheong is ready to eat!
  • Remove the lap cheong and slice it into bite-size pieces. Spoon the rice into a bowl and top it with the sliced lap cheong. Or you can add the sliced lap cheong back into the rice pot and mix everything together. We also like to add chopped green onions for a bit of color. Spoon into a bowl and eat hot! So onolicious ^_^

Steps:

  • 1. Rinse the rice and add to your rice cooker. Add water per your favored way, either measuring compared to the amount of rice, or using the 1 knuckle above your fingertip of water above the rice. My wife used a Jasmine rice rice that has diced dried vegetables in it for this.
  • 2. Rinse off the Chinese sausage links and place in the water on top of the rice. This will flavor the rice slightly and cook the sausages perfectly. Switch the ricer cooker to Cook.
  • 3. When the rice cooker switches to Warm, the rice will be cooked and the sausage perfectly steamed.
  • 4. Scoop some rice onto a place, and cut the sausages about 1/4 inch thick and place on the side of the rice. As easy as that.

1 cup Chinese sausage, thinly sliced on the diagonal
1/2 cup green onion, thinly sliced
2 3/4 cups water
1/4 cup cilantro leaf, for garnish

  • Rinse the rice well in a fine strainer.
  • Coat the rice bowl with cooking spray.

2 cups Thai glutinous rice ((see note below))
1/2 lb. (225g) ground pork
1/4 lb. (115g) shrimp, deveined and shells and tails removed ((about 12 medium-sized))
2 Chinese sausages
2-3 medium sized dried shiitake mushrooms
1 1/4 cups water
3 tablespoons oyster sauce
1 tablespoons soy sauce ((tamari for gluten-free))
1 teaspoon grated ginger
1 clove garlic, (minced or grated)
1/2 teaspoon tapioca starch ((cornstarch okay))
1/2 teaspoon sesame oil
1/4 teaspoon white pepper

Steps:

  • Place dried mushrooms in a bowl with hot water and let soak for at least 2 hours until softened. (See note below)
  • Run cold water through the rice in a strainer. Stir the rice with your hand to wash and rinse it well until the water is mostly running clear.
  • Soak the rice in a bowl of water for at least 2 hours.
  • Combine the 3 tablespoons oyster sauce, 1 tablespoon soy sauce (or tamari), 1 teaspoon grated ginger, minced garlic clove, 1/2 teaspoon tapioca starch, 1/2 teaspoon sesame oil, and 1/4 teaspoon white pepper in a bowl and mix well to make the sauce. Set aside.
  • Drain the rice through a colander, discarding the water.
  • Remove mushrooms from soaking liquid and gently squeeze out some of the water. Cut of and discard tough stems. Cut mushroom caps into slices or chunks.
  • Slice Chinese sausages into disks.
  • Heat a skillet over medium heat. Add Chinese sausage and ground pork and cook until pork is mostly cooked through.
  • Add mushrooms and sauce to the pan and stir. Heat through.
  • Add shrimp and cook until just starting to turn pink and remove from heat.
  • Transfer Chinese sausage mixture to the rice cooker pot and level out.
  • Add drained rice on top and level out.
  • Add 1 1/4 cups water to the rice cooker.
  • Cook until rice cooker button pops, or for about 25 minutes. Let sit for another 5-10 minutes. Rice should be completely cooked and slightly translucent.
  • Fluff rice with chopsticks, stirring well to mix the rice and filling ingredients.
  • Garnish with chopped green onions, if desired.

3 chicken thighs, boned, 1/2-inch dice, with the skin
1 tablespoon dark soy sauce
1/2 tablespoon sugar
1/2 tablespoon sesame oil
1/2 cup sliced scallions
1/2 tablespoon cornstarch
1 tablespoon minced ginger
1 lapchang (Chinese sausage), 1/4-inch disks
3 cups Chinese long grain rice, washed until water is clear, drained
1 teaspoon salt
1 tablespoon peanut oil
6 cups chicken stock

Steps:

  • Combine the chicken, soy, sugar, sesame oil, scallions, cornstarch, ginger and sausage and let marinate refrigerated for at least 15 minutes.
  • In a clay pot (or saucepan), combine the rice, salt and oil. On high heat, saute briefly then add the stock to Fuji (1 1/4 inches above the rice). Bring to a boil then reduce to medium heat and simmer until the stock has evaporated to the level of the rice. Add the chicken mixture, cover and cook in a preheated 350 degree F oven for 12 to 15 minutes. Stir well, cover, turn heat on high for only 1 minute then reduce heat to very low. Cook for an additional 10 minutes, then turn heat off. Let stand 5 minutes before serving.
  • Plating: Serve rice pot family style with rice bowls and chopsticks.
