ROAST PORK WITH CHINESE VEGETABLES

Roast Pork with Chinese Vegetables image

Roast Pork with Chinese Vegetables was a very popular American Chinese dish served in virtually all Chinese restaurants. Fresh slices of Chinese char siu roast pork stir fried in a melody of Chinese vegetables makes this a healthy and delicious stir-fry dish.

Time 35m

Number Of Ingredients 19

1 tablespoon canola or vegetable oil
½ teaspoon ginger ((minced))
2 cloves garlic ((minced))
½ cup fresh button or baby portabella mushrooms ((sliced ⅛-inch thick))
¼ cup red bell pepper ((sliced thinly lengthwise))
¼ cup bamboo shoots ((rinsed and drained of excess water))
¼ cup sliced water chestnuts ((rinsed and drained of excess water))
1 tablespoon Shaoxing wine
8 ounces Chinese Roast Pork (Char Siu)
3 to 4 cups large white bok choy ((cut into ¾-inch wide x 2-inch lengths))
1 tablespoon regular soy sauce
½ teaspoon salt
¼ teaspoon sugar
½ teaspoon sesame oil
1 teaspoon oyster sauce
Freshly ground white pepper
1 cup snow peas ((washed with the ends trimmed))
½ cup hot chicken stock
1 tablespoon cornstarch ((mixed with 1 tablespoon water))

Steps:

  • Prepare all of the vegetables and set aside. Things will move quickly once the wok is on the stove, and you'll want to be prepared!
  • Heat your wok over medium high heat, and spread 1 tablespoon of oil around the perimeter of the wok. Immediately add the minced ginger, and let fry for 5 to 10 seconds.
  • Stir in the minced garlic, and immediately add the mushrooms and red bell peppers. Stir fry for 15 seconds. Turn the heat up to high, and add the bamboo shoots, water chestnuts, and Shaoxing wine. Stir-fry for another 10 seconds. Next add the roast pork. Stir fry for 20-30 seconds.
  • Next, add the bok choy and give everything a good stir fry for 15 seconds. Add the soy sauce, salt, sugar, sesame oil, oyster sauce, and fresh ground pepper. Continue to stir-fry for another 20 seconds.
  • Add the snow peas and continue to stir-fry until they are evenly distributed in the mixture. Stir in the chicken stock, and let the mixture come to a boil.
  • Once it comes to a boil, stir in half of the cornstarch thickener, and cook for 20 seconds--until the sauce thickens and coats the back of a spoon. Add more of the cornstarch mixture if the sauce seems thin and if there is too much standing liquid. Add more chicken stock if the dish isn't saucy enough for your liking--it's all about your personal preference! Check how things are tasting, and if you'd like, you can add more soy sauce, oyster sauce, or salt to taste.
  • Plate and serve with steamed rice!

CHINESE ROAST PORK

Chinese Roast Pork image

20 years ago I took Chinese cooking classes, and our teacher recommended Chinese Cooking for Beginners by Huang Su-Huei. This recipe is from that book, slightly modified. It's a nice basic roasted pork, very easy to make. I use it for fried rice, ramen soup and in steamed Chinese buns. Prep time does not include marinating time. Update: Since posting the recipe, I am cooking low-sodium and no longer add the salt to the recipe as the soy sauce is salty enough, as is low-sodium soy sauce.

CHINESE ROAST PORK

Chinese Roast Pork image

This is a very easy dish to throw together, as once you have combined all the ingredients, it is just the marinating of the pork that takes the time. I tend to marinade mine in the morning before work but it can also be marinated overnight if preferred. I served ours with vegetable and egg fried rice but feel free to serve it with whatever you like. Prep Time does not include marinating time.

CHINESE ROAST PORK (CHAR SIU)

Chinese Roast Pork (Char Siu) image

Provided by Robert Farrar Capon

Categories     dinner, weekday, main course

Time 6h45m

Yield Enough for several meals serving 3 to 4 people

Number Of Ingredients 10

2 pounds boneless lean pork (pork tenderloin, boned butt or shoulder, or boned fresh ham)
1 tablespoon brown bean sauce
1 clove garlic, minced
1/2 cup chicken stock or water
1 teaspoon salt
4 tablespoons sugar
1 tablespoon light soy sauce
1 teaspoon tomato paste
1/2 teaspoon five-spice powder
1 teaspoon sherry

Steps:

  • Cut pork into neat billets about 6 by 3 by 1 1/2 inches and place in bowl. Put brown bean sauce, garlic, stock, salt, sugar, soy sauce and tomato paste in small saucepan and warm, stirring until everything is well blended. Remove from heat and stir in five-spice powder and sherry. Pour sauce over pork; mix to coat all pieces, cover and allow to marinate in refrigerator for at least 6 hours, turning a few times.
  • Preheat oven to 450 degrees. Place a large shallow pan half full of hot water on the bottom of the oven (or on the lowest rack). Wipe top rack, which should be at least 7 inches above the water, with paper towel dipped in vegetable oil. Turn pork once more in marinade to coat well and place pieces directly on the rack, leaving spaces between them but arranging them so that the drippings will fall into the water (the water will also provide moisture during cooking). Bake 20 minutes.
  • Lower heat to 350 degrees and bake 10 minutes more. (For sweeter pork, brush pieces lightly during the last 10 minutes with 2 tablespoons honey mixed with 2 tablespoons marinade.)
  • Remove pork pieces from oven; if it will not be used immediately as an ingredient in one of the following dishes, cool, wrap and refrigerate or freeze until needed. To use, cut into pieces to match the dish you have in mind; for example, dice pork if dish contains diced vegetables.

CHINESE ROAST PORK ON GARLIC BREAD

Chinese Roast Pork on Garlic Bread image

Chinese roast pork on garlic bread is one of the great New York sandwiches, a taste of the highest peaks of Catskills cuisine: thinly sliced, Cantonese-style char siu married to Italian-American garlic bread beneath a veil of sweet-sticky duck sauce. It's been around since the 1950s, a favorite of the summertime borscht belt crowd. You can make the sandwich with store-bought char siu if you like, but I prefer the homemade variety because I can make it with fancy pork from the farmers' market. It's also juicier and more flavorful. Then, layer the meat onto garlic bread, and add a drizzle of duck sauce - for that, I use leftover packets from Chinese takeout orders or make my own with apricot preserves cut through with vinegar. Some people add a slash of hot mustard; others fresh pickles, or coleslaw. "It's the ultimate assimilation crossover food," the food writer and erstwhile restaurant critic Arthur Schwartz told me. "That sandwich is a symbol of acculturation."

Time 1h15m

Yield 4 sandwiches

Number Of Ingredients 15

2 pounds boneless pork shoulder or butt
1/4 cup honey
3 tablespoons low-sodium soy sauce
2 tablespoons Shaoxing wine, dry sherry or sake
2 tablespoons hoisin sauce
1 tablespoon oyster sauce
1 teaspoon five-spice powder
2 jarred red fermented bean curd cubes, plus 1 tablespoon of the liquid from the jar (optional)
4 tablespoons unsalted butter, softened
8 garlic cloves, peeled and minced
4 large sub rolls, not too crusty or firm, or Italian- or French-style bread, cut into 4 (6-to-8-inch) sections, split lengthwise
1/2 cup apricot jam
Red- or white-wine vinegar, to taste
Chinese mustard, for serving
1 bunch scallions, trimmed and sliced on an angle (about 1 cup), for serving

Steps:

  • Cut the pork into 1-by-4-inch pieces (each about the size of a stick of butter).
  • Make the marinade: In a large bowl, whisk together the honey, soy sauce, wine, hoisin sauce, oyster sauce, five-spice powder and, if using, the bean curd and its liquid. Add the pork, and mix thoroughly, then cover, and refrigerate for a few hours or up to 1 day.
  • When you're ready to cook the pork, heat the oven to its highest temperature (not the broil setting). Line a large sheet pan with aluminum foil, and put a metal rack on top. Take the pork out of the marinade, and place it on the rack in an even layer. Reserve remaining marinade.
  • Slide the pan into the top third of the oven, and roast for 20 minutes. Turn the pieces, and roast until each piece is deeply caramelized on all sides and fall-apart tender, another 20 to 25 minutes, basting with the remaining marinade. (If the pork isn't as caramelized as you'd like, turn on the broiler to crisp the meat's exterior, 1 to 2 minutes.)
  • Turn off the oven, and transfer pork to a cutting board. Let the pork rest for 10 minutes, then slice about half the pieces lengthwise into thin strips about the size of thick-cut bacon. (Reserve the uncut pieces for future use, over rice, in stir-fries, etc.)
  • Make the garlic bread: Mash together the butter and garlic, and then spread across the sliced sides of the rolls or bread. Place bread directly onto middle rack in the still-hot oven to toast for 3 to 5 minutes. While your bread is toasting, prepare your homemade duck sauce by stirring together the apricot jam with vinegar, to taste.
  • Assemble the sandwiches: Spread mustard on one side of toasted bread, then duck sauce on the other. Add the sliced roast pork, garnish heavily with sliced scallions and serve.

Tips:

  • To ensure crispy pork belly, pat it dry before roasting. This will help remove excess moisture and allow the skin to crisp up.
  • Use a sharp knife to score the pork belly skin. This will help the crackling become crispy and prevent the skin from shrinking too much.
  • Roast the pork belly on a wire rack placed over a baking sheet. This will allow the air to circulate around the pork belly, resulting in even cooking.
  • Baste the pork belly with the five-spice powder mixture every 15 minutes during roasting. This will help to flavor the pork belly and create a crispy, flavorful crust.
  • Let the pork belly rest for at least 10 minutes before slicing. This will help the juices redistribute throughout the meat, resulting in tender, juicy pork belly.
  • Serve the pork belly panini with your favorite toppings, such as hoisin sauce, pickled cucumbers, and cilantro.

Conclusion:

This Chinese roast pork panini is a delicious and easy-to-make sandwich that is perfect for lunch or dinner. The crispy pork belly, flavorful hoisin sauce, and fresh vegetables come together to create a sandwich that is both satisfying and delicious. So next time you're looking for a quick and easy meal, give this Chinese roast pork panini a try.
