SPICY CHINESE POTATO SALAD

Spicy Chinese Potato Salad image

I saw a recipe like this on another web site. There were two ingredients I did not like...so by the time I changed that, I was also changing other things and came up with this....a potato salad WITHOUT the white stuff! UPDATE: My thanks to Susie D for reviewing recipe and for her honesty about the oil. It was not oily when I put it together and perhaps that was due to mixing while the potatoes were still very warm, thus absorbing the oil.

Time 45m

Yield 2 servings

Number Of Ingredients 9

1 pound tiny new potatoes
1 pound whole broccoli or 8 ounces ready-cut broccoli florets (3 1/2 to 4 cups)
4 ounces whole red onion
1 large clove garlic
1 tablespoon toasted sesame oil
3 tablespoons rice vinegar
1 1/2 tablespoons dry sherry
1 teaspoon reduced-sodium soy sauce
Freshly ground black pepper to taste

Steps:

Time 30m

Yield 8-10 serving(s)

Number Of Ingredients 12

5 -6 medium potatoes (about 2 1/2 pounds)
4 slices bacon, well-cooked and crumbled
3/4 cup chopped bok choy
1 red pepper, diced
1/2 cup chopped green onion
1/4 cup chopped cilantro
1 1/3 cups mayonnaise
1 teaspoon sugar
1 tablespoon soy sauce
1 -2 teaspoon sesame oil
1/8-1/4 teaspoon hot mustard powder
1/8 teaspoon salt

Steps:

  • Boil the potatoes until cooked, but still firm.
  • Cut into salad-sized chunks.
  • Mix the ingredients for the sauce together, using more or less sesame oil and hot mustard, according to taste (more is good, but only up to a point).
  • Put all salad ingredients in a large bowl, then add the sauce and mix well.
  • Chill.

Tips:

  • Choose the right potatoes: For the best results, use a waxy potato variety such as Yukon Gold, Red Bliss, or New Potatoes. These potatoes hold their shape well when cooked and won't get mushy in the salad.
  • Cook the potatoes properly: To ensure that the potatoes are cooked evenly, boil them whole in a large pot of salted water until they are fork-tender. Drain the potatoes and let them cool slightly before slicing them.
  • Use a flavorful dressing: The dressing is what really brings this salad together. Be sure to use a dressing that is both tangy and creamy. A good option is to use a combination of mayonnaise, sour cream, Dijon mustard, and apple cider vinegar.
  • Add your favorite mix-ins: This salad is a great way to use up leftover vegetables and proteins. Feel free to add your favorite mix-ins, such as cooked bacon, hard-boiled eggs, celery, or carrots.
  • Chill the salad before serving: For the best flavor, chill the salad for at least 30 minutes before serving. This will allow the flavors to meld and develop.

Conclusion:

Chinese potato salad is a delicious and easy-to-make side dish that is perfect for any occasion. With its creamy dressing, tender potatoes, and flavorful mix-ins, this salad is sure to be a hit with everyone at your table. So next time you're looking for a quick and easy side dish, give Chinese potato salad a try.
