1 tablespoon Shaoxing wine
2 center cut pork chops ((about 1-inch thick, 10-12 ounces/280-340g))
2 tablespoons vegetable oil

Steps:

1/3 cup ketchup
3 tablespoons brown sugar

1 tablespoon plus 1 teaspoon Worcestershire sauce
2 tablespoons apple cider vinegar
2 tablespoons cold unsalted butter, cut into small pieces
12 ounces green beans, trimmed
Kosher salt and freshly ground pepper
1 1/2 cups instant flour, such as Wondra
1 teaspoon baking powder
1 large egg white
Vegetable oil, for frying
4 1/4-inch-thick boneless pork loin chops (about 1 pound), trimmed

Steps:

  • Cook the jam, ketchup, 1 tablespoon Worcestershire sauce and 3 tablespoons water in a large skillet over medium-high heat, whisking, until thickened, about 5 minutes. 3 under ripe peaches, pitted, and cut into 12 wedges each
