- 1. Melt the butterscotch chips and chocolate chips in a large double boiler. Stir constantly until melted. Remove from heat when melted. Add chinese noodles and peanuts. Drop onto wax paper and cool in refrigerator.

- Melt chips in microwave or double boiler. If using microwave, stir every 30 seconds until smooth taking approximately 1 minute or so. Remove and add finely chopped nuts and noodles. Stir until completely mixed. Drop by teaspoon onto waxed paper. Let harden in refrigerator and store in tin. ( Keep pieces small.)

This is a recipe when butterscotch chips first came out that I have modified over the years. My kids loved them and now my grandkids want me to make them all the time IF their parents will let me.

Steps:
- 1. Set aside noodles. A can of chinese noodles is 5 oz, a bag is about 12 oz. Use one can or 1/2 bag
- 2. In a mixing bowl, microwave together the marshmallows, peanut butter, /14 C butter for 1 or 2 minutes increments on high heat. Stir together until almost smooth. I just repeatedly spray a spoon with oil in order to mix and drop the cookies
- 3. With a greased spoon, mix in the noodles with microwaved cookies. Then drop on wax paper with greased spoon. Edible immediately, but they harden into a fudgy, crunchy candy in about 20 minutes.
Tips:
- Use a large pot to make the sugar syrup, as it will bubble up and expand.
- Stir the sugar syrup constantly to prevent it from burning.
- Once the sugar syrup has reached the desired color, remove it from the heat and let it cool slightly.
- Add the noodles to the sugar syrup and stir until they are evenly coated.
- Pour the coated noodles onto a greased baking sheet and let them cool completely.
- Once the noodles are cool, break them into pieces and enjoy!
- You can store Chinese noodle candy in an airtight container at room temperature for up to 2 weeks.
