EASY CHINESE SOY-BRAISED CHICKEN

Easy Chinese Soy-Braised Chicken image

This is a quick Cantonese recipe for succulent, melt-off-the-bone tender chicken from Diana Kuan's excellent blog, "Appetite for China". The liquid should cover at 3/4 of the chicken; if you need more liquid maintain the 2 parts soy sauce to 3 parts water ratio.

Categories     Chicken Thigh & Leg

Time 25m

Yield 4 serving(s)

Number Of Ingredients 8

2 cups soy sauce, more if needed (500 mL)
3 cups water, more if needed (750 mL)
1 piece ginger, peeled and sliced
3 tablespoons sugar (45 mL)
2 teaspoons cinnamon (10 mL)
1 teaspoon star anise (5 mL)
4 pieces chicken thighs (or a combination of the two) or 4 pieces chicken wings (or a combination of the two)
1 scallion, roughly chopped

Steps:

  • Begin heating soy sauce and water over medium flame. Add ginger, sugar, cinnamon, and star anise.
  • Bring mixture to simmer and add chicken. Reduce heat to very low and cover casserole dish/pot. Make sure heat is as low as can be without turning off; simmering soy sauce can easily become rapidly boiling soy sauce, which can easily become a big mess to clean up.
  • Cook chicken for 15 to 20 minutes, depending on the size of the pieces. Cut one open to check for doneness. Ladle chicken from sauce mixture and serve as is. Or if you're handy with a cleaver, chop up those thighs into smaller pieces. Garnish with scallions.

HOISIN-HONEY WINGS

Hoisin-Honey Wings image

I found this recipe from the "easy Chinese recipes" section of About.com and modified it slightly to my taste. It is easy, not too time consuming and very few ingredients are needed.

Provided by Swati Banerjee

Categories     Lunch/Snacks

Time 50m

Yield 8 wings, 4-6 serving(s)

Number Of Ingredients 9

8 chicken wings
1/2 tablespoon honey
2 1/2 tablespoons hoisin sauce (substitute with barbeque sauce if not available)
3 tablespoons soy sauce or 3 tablespoons teriyaki sauce
1/4 teaspoon salt (one or two pinches)
1/2 teaspoon black pepper
1 garlic clove, minced
1/4 teaspoon fresh ginger, minced
3 -4 scallions, minced

Steps:

  • Mix mix the hoisin sauce, honey, soy/Chinese teriyaki sauce, salt, black pepper, ginger, garlic and scallion together. Marinate the chicken wings in this mixture for 15 minutes.
  • Heat oven to 350°F Put the chicken wings onto skewers, two per skewer, and put on a baking tray or cookie sheet. Bake for 30-35 minutes, basting occasionally with the marinade.
  • Change oven setting to "broil" and broil for 5-8 minutes, changing sides and basting occasionally to prevent the chicken from burning.
  • Take out from the oven; remove from the skewers and serve.
  • Tip: Skewers aren't necessary, I just use skewers because basting is easier and there's lesser chances of the chicken skin getting stuck to the tin foil on the baking tray or cookie sheet.
  • Suggestion: I put in a tiny bit of extra-hot pepper paste when I make this for my boyfriend because he likes doesn't like anything too sweet. In case you don't have that, just increase the black pepper or use cayenne pepper instead.

CHINESE HONEY CHICKEN

Chinese Honey Chicken image

Crisp fried chicken strips in a sweet sauce. Despite the name there is no honey in this recipe. I have not yet tried it, it is for an ISO request on the recipe board. Note: When the recipe was first posted, there were an additional 2 Tablespoons of salt listed in the batter. This was a typo and never should have been there. Several reviewers alerted me to the error, and the extra salt listing has been removed.

Time 1h15m

Yield 4 serving(s)

Number Of Ingredients 19

4 tablespoons cornstarch
1/4 cup flour
1 teaspoon baking powder
1/2 cup water
1/2 teaspoon salt
1 egg
1 egg white
1 1/2 lbs boneless chicken breasts, cut in thin strips
2 cups peanut oil, for deep-frying
1 1/2 tablespoons peanut oil
2 teaspoons chopped ginger
3 tablespoons finely sliced garlic
1 teaspoon salt
3 tablespoons sugar
1 teaspoon Chinese white rice vinegar
1/2 cup water
1 teaspoon cornstarch, mixed with
1 teaspoon water
garnish toasted sesame seeds (optional)

Steps:

  • MIX THE BATTER INGREDIENTS together in a medium-sized bowl; it should be thick and smooth.
  • Allow the batter to sit, covered for at least 30 minutes.
  • Combine the chicken with the batter.
  • Heat a wok or large deep skillet until it is hot and add the oil for frying.
  • When the oil is barely smoking, deep-fry the chicken for 2 minutes or until the batter is just firm.
  • You should do this in several batches.
  • Remove the chicken with a slotted spoon and drain on paper towels.
  • TO MAKE SAUCE: Heat a small saucepan; when it is hot, add the oil, ginger and garlic, and stir for 30 seconds.
  • Then add the rest of the sauce ingredients and simmer for 2 minutes.
  • Keep warm.
  • Reheat the oil in the wok until it is very hot, but not smoking.
  • Deep-fry the chicken again until it is golden and crisp, about 1 minute.
  • Remove and drain, place on a warm platter, drizzle with the sauce (and sprinkle with the optional toasted sesame seeds if desired) and serve immediately.

Tips:

  • Choose the right chicken wings: Use fresh, whole chicken wings for best results. Avoid using frozen wings, as they may have lost some of their flavor and moisture.
  • Marinate the chicken wings: Marinating the chicken wings in the honey soy sauce mixture helps to infuse them with flavor and makes them more tender. Be sure to marinate the chicken wings for at least 30 minutes, or up to overnight.
  • Cook the chicken wings over medium-low heat: Cooking the chicken wings over medium-low heat helps to prevent them from drying out. Be sure to cook the chicken wings until they are cooked through, but not overcooked.
  • Use a meat thermometer to check the internal temperature of the chicken wings: The internal temperature of the chicken wings should reach 165 degrees Fahrenheit before they are safe to eat.
  • Serve the chicken wings immediately: Serve the chicken wings immediately after they are cooked, while they are still hot and crispy.

Conclusion:

Chinese Honey Soy Braised Chicken Wings (Mut Jup Mun Gai Yik) is a delicious and easy-to-make dish that is perfect for a weeknight meal or a party appetizer. The chicken wings are marinated in a flavorful honey soy sauce mixture and then braised until they are cooked through and tender.
