- 2. In heavy (oven safe) skillet over meduim heat; brown beef and onions. Season with chili powder, cumin, salt and pepper. Drain off excess oil or blot out with paper towels. NOTE: I used a cast iron skillet.
- 3. Meanwhile in another skillet over medium/high heat, coat bottom of skillet with oil. Heat oil; add potatoes to hot oil. Season with salt & pepper and red pepper flakes. Fry potatoes until they start browning. They need to be almost done. They will continue cooking in oven. - 5. Bake in preheated oven for 20 minutes. Should be bubbly around the edges of skillet before you remove from oven. This time is based on all ingredients being hot before going into the oven.
CHINESE HAMBURGER HASH I I
I added Cook & Lace's 'Chinese Hamburger Hash' recipe to my cookbook yesterday. I found another one today that uses brown rice. From the cookbook "Stories and Recipes of the Great Depression of the 1930's". I've not made this so let me know how it turns out.

Tips:
- Use fresh ingredients: The fresher the ingredients, the better your hamburger hash will taste. If possible, use local and organic ingredients.
- Season your meat well: Don't be afraid to season your meat generously. This will help to give it flavor and prevent it from becoming bland.
- Cook your meat over medium heat: This will help to prevent it from drying out. If you cook it over too high of heat, it will become tough and chewy.
- Don't overcook your meat: Once your meat is cooked through, remove it from the pan. Overcooking will make it tough and dry.
- Use a variety of vegetables: This will add flavor, color, and texture to your hamburger hash. Some good options include potatoes, onions, peppers, and mushrooms.
- Don't be afraid to experiment: There are many different ways to make hamburger hash. Feel free to experiment with different ingredients and seasonings until you find a combination that you love.
Conclusion:
Hamburger hash is a delicious and versatile dish that is perfect for breakfast, lunch, or dinner. It is easy to make and can be tailored to your own personal taste. So next time you have some leftover hamburger, don't throw it away! Instead, make a batch of hamburger hash and enjoy a hearty and satisfying meal.
