1 teaspoon plus 2 tablespoons sesame oil, divided
3 eggs, beaten
2 tablespoons canola oil
2 small onions, finely chopped
6 medium fresh mushrooms, thinly sliced
2 teaspoons minced garlic
1 teaspoon minced fresh gingerroot
4 cups cold cooked rice
1 cup frozen peas, thawed
1/4 cup reduced-sodium soy sauce
1/4 teaspoon salt
1/4 teaspoon pepper
3 green onions, thinly sliced
Optional ingredients: Chinese-style mustard, duck sauce and additional soy sauce

Steps:

  • In a large skillet, heat 1 teaspoon sesame oil over medium-high heat. Add eggs to skillet. Cook and stir until set. Remove to a plate; set aside., In the same skillet, heat canola oil and remaining sesame oil. Saute onions and mushrooms for 2-3 minutes or until mushrooms are tender. Add garlic and ginger; saute 1-2 minutes longer., Stir in the rice, peas, soy sauce, salt and pepper. Chop egg into small pieces; stir into skillet and heat through. Stir in green onions. Serve with mustard, duck sauce and additional soy sauce if desired.

250 g bacon
250 ml mushrooms, sliced
250 ml celery, diced
125 ml spring onions, sliced
1 egg, slightly beaten
30 ml soy sauce

Steps:

  • Dice bacon and fry until crisp.
  • Remove bacon and saute onions and celery in bacon fat.
  • Cook until tender.
  • Add mushrooms, rice and soy sauce.
  • cook for 10 minutes on low heat, stirring occasionally.
  • Stir in beaten egg and cook only until egg is done.

2 tsp oil
1 egg , beaten
2 rashers bacon , chopped
175g mushrooms , sliced
200g frozen peas
1 garlic clove , crushed
small knob of ginger , grated
2 tsp dark soy sauce , plus extra to serve
1 tsp sugar
250g cooked basmati rice

Steps:

  • Heat the oil in a frying pan, then tip in the egg. Leave to set for 30 secs-1 min, swirling every now and again, then tip it out and finely slice. Add the bacon and mushrooms to pan, then fry until golden, about 3 mins. Add the peas, garlic and ginger, then cook for 1 min.
  • Mix the soy sauce and sugar together. Turn up the heat, add the cooked rice to the pan, heat through, then splash in the sweet soy sauce. Stir through the egg and serve straight away, with more soy sauce if you like.

2 (3 ounce) bags brown rice (10 min.'Success' is what I used)
2 tablespoons oil
1/2 cup chopped onion
2 eggs, beaten
1 cup cooked shrimp (or chicken, ham, etc.)
1 cup frozen peas
1 teaspoon garlic powder
3 tablespoons soy sauce
1 teaspoon sesame oil (optional)

Steps:

  • Prepare rice according to directions and drain.
