2 pounds chicken thighs (boneless and skinless cut into 1 inch cubes)
2 tablespoons soy sauce (low sodium)
6 cloves garlic (minced)
1 cup cornstarch
⅓ cup vegetable oil
2 large onions (chopped)
1 large red bell pepper (cut into 1 small ½ inch pieces)
2 teaspoons sesame oil
2 teaspoons Sichuan peppercorn powder
2 teaspoons black pepper (freshly ground)
⅓ cup oyster sauce
¼ cup soy sauce (low sodium)
1 teaspoon dark soy sauce
¼ cup Shaoxing wine

Steps:

  • Prep the chicken: In a medium size bowl, combine the chicken pieces with the 1 tablespoon of soy sauce and minced garlic. Toss well. Sprinkle the cornstarch over the chicken and toss well.

Black Pepper Chicken Stir-Fry image

I just love this chicken stir-fry recipe, and the aroma is out of this world! The dish is slightly sweet and very peppery, so you may want to serve it over white or brown rice to tame the heat. -Barbie Miller, Oakdale, Minnesota

1/4 cup oyster sauce

1/2 teaspoon white pepper
1 teaspoon sake or 1 teaspoon rice wine

  • Add sauce mixture to the veggies and heat until warm, then add the chicken and fully coat with the sauce.
  • Serve with rice.
  • Enjoy and thank Bobby for this great recipe!

Tips:

  • Use a well-seasoned wok: A well-seasoned wok will help to prevent the chicken from sticking and will also add flavor to the dish.
  • Cut the chicken into thin strips: This will help the chicken to cook evenly and quickly.
  • Marinate the chicken: Marinating the chicken in a mixture of soy sauce, Chinese rice wine, garlic, and ginger will help to tenderize the chicken and add flavor.
  • Use a high heat: When cooking the chicken, use a high heat to quickly sear the outside of the chicken and lock in the juices.
  • Stir-fry the chicken in batches: If you are cooking a large amount of chicken, cook it in batches to avoid overcrowding the wok.
  • Add the sauce: Once the chicken is cooked, add the sauce and stir-fry until the chicken is evenly coated.
  • Serve immediately: Serve the chicken immediately over rice or noodles.
