Every time my family and I go to a Chinese buffet we make a bee line for the green beans! This is a simple and tasty re-creation of that much loved side dish, goes well with any Asian meal. Make sure to slice the garlic, don't use a garlic press. Oyster sauce can be found in the Asian section of your grocery store, at an Asian grocery store, and online.

1 tablespoon oil, peanut or sesame
2 cloves garlic, thinly sliced
1 pound fresh green beans, trimmed
1 tablespoon white sugar

1/3 cup sugar
oil, to deep fry in

Steps:

  • Use either a deep fryer, or a large deep skillet.
  • Be sure to add enough of oil to line the bottom of the pan a couple of inches deep.
  • Heat oil to 350 degrees.
  • Remove biscuits from can and fry a few at a time in the fryer.
  • When browned on one side, turn over.
  • When golden brown on both sides remove from oil, and drain on paper towels.
  • Pour sugar into a small container, and once the doughnuts have cooled slightly toss the doughnut into the sugar, and coat on both sides.
  • Be sure to fry only a couple at a time.

1 lb boneless skinless chicken breast (or thighs)
6 tablespoons cornstarch (for dusting)
1 white onion, diced
1 cup frozen peas and carrot
oil (for frying)
1/4 cup oyster sauce
1 teaspoon soy sauce
1 teaspoon black pepper
1/2 teaspoon white pepper
1 teaspoon sake or 1 teaspoon rice wine

Steps:

  • Mix together all of the sauce ingredients and set aside.
  • Cut chicken into 1/2" cubes and dust pieces with cornstarch.
  • Dry fry chicken in batches until golden brown. Drain on paper towels.
  • Heat 1 tbsp oil in pan and stir fry onion for a few minutes, then add the peas and carrots and stir fry for another few minutes.
  • Add sauce mixture to the veggies and heat until warm, then add the chicken and fully coat with the sauce.
  • Serve with rice.

Every time I go to my fave Chinese restaraunt I HAVE to eat this crab casserole. I love the flavors, the texture, heck ... I just love everything about it except for the fact that it makes me wish I had a second stomach just so I could eat more!) At first I didn't think there was any breadcrumbs in it. My MIL said there is. So, I went and bought a bit of it and pulled it apart bit by bit and found there was indeed some breadcrumbs in it. Anyways, I believe this is how they make it. 3 cups lump crabmeat, imitation is what I use
8 ounces cheddar cheese, shredded
2 tablespoons onions, finely chopped
1/2 cup celery, finely chopped
4 tablespoons butter
3 tablespoons flour
3/4 teaspoon salt
2 cups half-and-half
1 egg, beaten
2 tablespoons parsley, finely chopped
1 1/2 cups fine breadcrumbs

Steps:

  • Heat 4 tablespoons butter in saucepan.
  • Add onion and celery; saute until veggies are tender.
  • Blend in flour and salt.
  • Add half and half slowly.
  • Cook, stirring constantly, until mixture comes to a boil and thickens nicely.
  • Remove from heat.
  • Gradually add a small amount of sauce to the beaten egg. Stir rapidly as you add it.
  • Return egg mixture to sauce and mix well.
  • Add crab meat, bread crumbs and parsley and toss gently.
  • Put all into a lightly buttered (I use the spray) lasagna pan (or you can use individual size casseroles).
  • Sprinkle cheese over crab mixture.
  • Bake in 350-degree oven for 20 - 25 minutes or until bubbly and cheese is lightly browned.
