CHINESE BLACK PEPPER BEEF

Chinese Black Pepper Beef image

This recipe comes from a cousin of mine (Chef Lynn). She recently went to China and posted this recipe when she got back. Due to our suddenly differing work schedule, my husband and I have sometimes have to eat lunch as our meal together. I came home (going from one job to the next), and he had prepped everything for me. I...

Number Of Ingredients 18

8 oz beef steak
5 oz yellow or white onion
5 oz green pepper
4 Tbsp corn or peanut oil, divided
2 tsp thinly sliced ginger
2 tsp thinly sliced garlic
MARINADE:
1/4 tsp salt
2 tsp light soy sauce
1 tsp dark soy sauce
2 tsp rice wine
4 tsp cornstarch
several tsp water
SAUCE:
1/2 tsp sugar
2 tsp rice wine
2 tsp light soy sauce
1 tsp black pepper

Steps:

  • 1. Thin slice the beef, onion, green pepper, ginger, and garlic.
  • 2. Mix the marinade ingredients and stir the beef into it. Let sit for about 15 minutes.
  • 3. Place 2 tbsp oil in the wok and get it hot. Just when it starts to smoke, add the green pepper and onion. Stir. Add 1 pinch of salt and keep stirring until the onion is fragrant, about 1 minute. Remove the onion from the pan.
  • 4. **NOTE-If doubling this recipe, hold off adding the garlic and ginger until the last bit of steak is ready to be cooked.** Season the wok with 2 more tbsp oil; then add the ginger and garlic. Stir for about 1 minute to develop the flavor. Then add the beef. Stir slowly until the beef separates and changes color.
  • 5. Add the green pepper and onion back in the pan. Reduce the heat to medium and add the sauce ingredients. Stir for another minute and serve. This dish is great by itself, or served with rice.

Tips:

  • To ensure the beef remains tender and juicy, slice it against the grain and tenderize it with a meat mallet or the back of a knife.
  • Use a hot wok or large skillet to sear the beef in batches. This will prevent the beef from overcrowding and steaming, resulting in a more flavorful and crispy texture.
  • To achieve the authentic Chinese black pepper taste, use a combination of freshly cracked black pepper and ground black pepper. Adjust the amount of pepper to your desired level of spiciness.
  • If you prefer a thicker sauce, dissolve a cornstarch slurry (equal parts cornstarch and water) into the cooking liquid and bring to a boil until thickened.
  • Serve the Chinese black pepper beef immediately over steamed rice or noodles. Garnish with chopped green onions and sesame seeds for an extra layer of flavor and texture.

Conclusion:

Chinese black pepper beef is a classic dish that combines the bold flavors of black pepper, garlic, and ginger with tender and juicy beef. By following these tips and the detailed recipe provided, you can easily create this delectable dish at home. Whether you're a seasoned cook or a beginner, this recipe is sure to impress your family and friends.
