- Cut the beef steak into 1cm wide strips. Marinate with all the marinating seasonings including soy sauce, oyster sauce, pepper, sugar, Chinese cooking wine and cornstarch for 15 minutes. Mix in sesame oil just before start frying.
- Add cooking oil in a large pan until the oil can evenly cover the bottom of the pan. spread the beef strips in. Let them stay for around 5 to 6 seconds and gently stir them several times until the beef strips change color. Transfer the beef out and leave around 1 tablespoon of the oil in.
- Fry garlic until aromatic. Fry green peppers and red onion until slightly soft (do not kill them). Add a small pinch of salt. Return beef strips back. Mix well. Spread freshly ground black pepper.
- Serve hot with noodles or steamed rice.

- 1. Thin slice the beef, onion, green pepper, ginger, and garlic.
- 2. Mix the marinade ingredients and stir the beef into it. Let sit for about 15 minutes.
- 3. Place 2 tbsp oil in the wok and get it hot. Just when it starts to smoke, add the green pepper and onion. Stir. Add 1 pinch of salt and keep stirring until the onion is fragrant, about 1 minute. Remove the onion from the pan.
- 4. **NOTE-If doubling this recipe, hold off adding the garlic and ginger until the last bit of steak is ready to be cooked.** Season the wok with 2 more tbsp oil; then add the ginger and garlic. Stir for about 1 minute to develop the flavor. Then add the beef. Stir slowly until the beef separates and changes color.
- 5. Add the green pepper and onion back in the pan. Reduce the heat to medium and add the sauce ingredients. Stir for another minute and serve. This dish is great by itself, or served with rice.
