CHINESE BBQ CHICKEN
The marinade for this chicken is based on the famous Chinese BBQ Pork (Char Siu), a very popular recipe on my blog! It's sweet, savoury, sticky, laced with Chinese Five Spice. Add your own touch like ginger and chilli for a kick! The red food colouring is optional - it gives the chicken the reddish tinge that Char Siu is known for. Recipe VIDEO below, MARINATING TIME: 3 - 24 hrs.

Steps:
- Place Marinade ingredients in a ziplock bag or bowl and mix to combine.
- Add chicken and mix to coat. Marinade for 3 - 24 hours.
- Optional: Cut chicken into bite size or large pieces and thread onto skewers. Use 1 skewer for small pieces, 2 for large, like pictured in post.
- Heat half the oil in a heavy based skillet over medium high heat, or BBQ on medium (if using grill side, brush oil on bars).
- Remove chicken from marinade (RESERVE for basting) and place in the skillet - cook in 2 batches, don't crowd the pan. Cook for 4 minutes then turn.
- Use the Marinade to baste the cooked side of the chicken. After 3 minutes, turn the chicken over so the basted side is now cooking again - cook for 1 minute.
- Baste the chicken, then turn again and cook for 45 sec - 1 min.
- Transfer chicken to a plate, cover loosely with foil and rest for 5 minutes.
- Serve, garnished with green onions / scallions if using!

SPICY CUMIN CHICKEN HEART SKEWERS
Some people might be afraid of cooking chicken hearts, but they're not that much different from any cut of dark chicken meat. These morsels of muscle are perfect for grilling: lean, flavorful, with a perfect bouncy bite.

Steps:
- To make the chicken hearts: Butterfly the chicken hearts by slicing them lengthwise, cutting deeply without cutting them entirely in half.
- Smash the green onions and ginger with clean hands to release their flavors.
- Add the smashed green onions and ginger, along with the Sichuan peppercorns, five-spice powder, cooking wine, and salt to a container along with 1 cup (240 ml) water to make a marinade.
- Add the chicken hearts to the marinade and stir well to combine. Cover the container with plastic wrap and let marinate in the refrigerator for 1 hour. Any longer and you risk over-marinating.
- To grill and serve: Thread 5 chicken hearts onto each skewer. The skewers may be kept refrigerated, covered, before cooking for no longer than 2 hours.
- Prepare a robata or other grill with charcoal that has turned ashy gray and is smoldering hot but not actively emitting flames. Set the skewers down on the grill surface and cook for 2 minutes, then flip over and cook for an additional 2 minutes. When the meat tightens up and oil begins to seep out, it is almost done. At this point, brush the oil on one side of the meat, then sprinkle half of the cumin, red chili powder, and salt, to taste, on top.
- Flip the skewers over and season the other side in the same way. Flip the skewers once more and toast the newly seasoned side for about 30 seconds. Cook for about a minute or so more on each side.
- Remove the cooked skewers to a plate, sprinkle with the sesame seeds, and serve immediately.
- Note: When brushing oil and sauce on the meat while over the fire, do so sparingly, dabbing off any excess, so it doesn't drip onto the flames. If at any point the flames flare up, remove the skewers from the grill until the flames die down.
Tips:
- To make the chicken skewers more flavorful, marinate them in the soy sauce, Shaoxing wine, and Chinese five-spice powder for at least 30 minutes.
- If you don't have bamboo skewers, you can use metal skewers or wooden skewers that have been soaked in water for at least 30 minutes.
- When grilling the chicken skewers, baste them with the reserved marinade every few minutes to keep them moist and flavorful.
- Cook the chicken skewers over medium heat to prevent them from burning.
- Serve the chicken skewers with your favorite dipping sauce, such as hoisin sauce, sweet and sour sauce, or Sriracha.
Conclusion:
Chinese BBQ chicken skewers are a delicious and easy-to-make appetizer or main course. They are perfect for parties or potlucks, and they can be cooked on the grill or in the oven. With a few simple ingredients and a little bit of time, you can create a dish that is sure to impress your friends and family.
