CHINESE FRIED RICE

Chinese Fried Rice image

This Chinese fried rice has the flavor those other recipes are missing. Tastes like takeout. I want to dedicate this dish to Bergy, whose recipe "AM & B's Indonesian Mehoon" has inspired this dish. Make sure you season your rice with salt before it cooks. Add some butter to the cooking water, as well. Other seasonings should be added before you cook, as well, so it has time to get inside the rice. If you like sesame flavor, add 1 tsp. of it after you add the green onions, but do not use it as a cooking oil because it easily burns.

3 drops sesame oil
8 ounces cooked lean boneless pork or 8 ounces chicken, chopped
1/2 cup finely chopped carrot (very small)

4 cups cold cooked rice, grains separated (preferably medium grain)
4 green onions, chopped
2 cups bean sprouts

CHINESE-AMERICAN FRIED RICE

Add chicken or pork if desired. This time I added left-over pork, but usually, I just like it without meat.

Categories     Rice Sides

Time 40m

Number Of Ingredients 11

4 Tbsp peanut oil
3 large eggs, beaten
1 medium white onion, minced
3 clove garlic, minced
3 Tbsp minced peeled fresh ginger
2 c cooked regular long-grain rice
2-1/2 Tbsp soy sauce
2 Tbsp dark sesame oil
1/4 c dry sherry
4 scallions, white and green parts, thinly sliced on the diagonal
salt and freshly ground pepper to taste

Steps:

  • 1. Heat 1 Tablespoon peanut oil in a skillet over medium heat. Add the eggs and stir to scramble for 1-2 minutes or until fluffy. Set aside.
  • 2. Add remaining 2 Tablespoons oil to a wok or skillet, and heat over medium heat until the oil is rippling, about 1 minute.
  • 3. Add the onion, garlic, and ginger and stir-fry until the mixture is aromatic but not browned, about 1 second.
  • 4. Add the cooked rice, soy sauce, sesame oil, and sherry and stir-fry for 2 minutes, breaking up any lumps of grains and blend the mixture well. Stir in the scallions and stir-fry, tossing quickly but gently for 10 seconds.
  • 5. Add the previously scrambled eggs, mix all together and season with salt and pepper.

Tips:

  • Use day-old rice. This will help the rice grains stay separate and not clump together.
  • Rinse the rice before cooking. This will remove the starch and help the rice cook evenly.
  • Use a large skillet or wok. This will give the rice plenty of room to cook and prevent it from sticking.
  • Heat the oil over medium-high heat. This will help the rice cook quickly and evenly.
  • Add the eggs and cook until scrambled. This will add flavor and texture to the rice.
  • Add the rice and cook until heated through. Be sure to stir the rice constantly so that it doesn't stick.
  • Add the vegetables and cook until tender. You can use any vegetables you like, such as peas, carrots, corn, or broccoli.
  • Add the soy sauce and sesame oil. These ingredients will add flavor and depth to the rice.
  • Serve hot. Chinese-American fried rice is best served hot, so enjoy it immediately.

Conclusion:

Chinese-American fried rice is a delicious and easy-to-make dish that is perfect for a quick and easy meal. With its combination of rice, eggs, vegetables, and soy sauce, it is a flavorful and satisfying dish that is sure to please everyone at the table. Whether you are looking for a weeknight dinner or a party appetizer, Chinese-American fried rice is a great choice.
