1 cup lightly packed chopped parsley (ideally, flat leaf "Italian" parsley)
3 to 5 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon freshly ground pepper
1/2 teaspoon chili pepper flakes
2 tablespoons fresh oregano leaves (optional)
2 tablespoons shallot or onion, minced
3/4 cup vegetable or olive oil
3 tablespoons sherry wine vinegar, or red wine vinegar
3 tablespoons lemon juice
1 tablespoon cayenne pepper
3 tablespoons salt
2 1/2 pounds rib-eye, New York strip, or sirloin steak, 1 1/2 inches thick
2 baguettes, sliced into 1/4-inch-thick slices

Steps:

  • Preheat a grill.
  • Place all chimichurri sauce ingredients in a blender or food processor and pulse until well chopped, but not pureed. Reserve.
  • Dissolve cayenne pepper and salt in 1 cup hot water. Transfer to a squeeze container.
  • Place the steak directly over a hot grill, baste with the chimichurri grilling sauce, and grill until the outer portion of the meat reaches the desired degree of doneness. Remove the steak from the grill and slice long strips from the outer edges of the steak. Instruct guests to pick up a steak slice from the cutting board with their fingers, place it on a slice of baguette, and enjoy. Return the remaining steak to the grill, baste, and grill until more of the steak is cooked. Remove and repeat the slicing and serving procedure until steak is consumed. For extra spicy steak, baste 2 or 3 additional times with the cayenne pepper mixture during grilling process. Spoon chimichurri sauce over steak. (Also brilliant on any grilled fish or chicken)

1 tablespoon vegetable oil
1 large red onion, cut into 1/2 inch thick rounds
salt & pepper, to taste
2 -3 lbs flank steaks
chimichurri sauce
1 cup parsley, packed
5 garlic cloves, peeled
1/2 cup olive oil
1/4 cup red wine vinegar
1/4 teaspoon red pepper flakes
1 teaspoon table salt

Steps:

  • Prepare grill according to manufacturer's instructions.
  • Place onion on baking sheet; brush both sides lightly with oil and season with salt and pepper.
  • Sprinkle both sides of steak with salt and pepper. Place onion and steak directly on grill. Grill onion, turning once, until streaked with dark grill marks, 10 to 12 minutes. Grill steak until well seared and dark brown on side, 5 to 7 minutes. Using tongs, flip steak; continuing grilling on other side until interior of meat is slightly less done than you want it to be when you eat it, 2 to 5 minutes more for rare or medium-rate.
  • Transfer steak to cutting board, cover loosely with foil and let rest for 5 minutes. Slice steak very thing on bias against the grain. Season with salt & pepper to taste. Place onions on platter and arrange meat over onions. Serve with Chimichurri Sauce.
  • For Chimichurri Sauce:.
  • Process parsley and garlic in the work bowl of a food processor fitted with a steel blade, stopping as necessary to scrape sides of bowl. Until ingredients are chopped fine. Transfer mixture to medium bowl. Whisk in oil, vinegar, pepper flakes, salt and 2 tablespoons water until thoroughly blended. Serve immediately.

Steps:

  • Preheat the oven to 400 degrees F.
  • Mix together 3 tablespoons olive oil, cumin, red pepper flakes, oregano and salt to taste in a bowl and coat the steaks in the mixture.
  • Heat a large frying pan on high heat and fry the steaks on each side for 2 to 3 minutes until they are browned.
  • Place two 1 1/2 to 2 feet long sheets of Reynolds Wrap® Aluminum Foil on a table and place each steak in the center of the foil and fold up the ends and the outside of the foil to create a packet.
  • Bake the steak for 10 minutes for a medium-rare internal temperature. Add 5 more minutes of baking to achieve a medium internal temperature.
  • Remove the steaks from the packets and let them rest for 2 to 3 minutes before serving.
  • Combine the garlic, parsley, cilantro, red wine vinegar, remaining 2 tablespoons of olive oil and salt and pepper in a food processor and process on high speed until it becomes like a paste.

1 bunch fresh flat-leaf parsley, finely chopped

1 teaspoon crushed black peppercorns
4 pounds skirt steak, trimmed of excess fat
Extra-virgin olive oil
Kosher salt and freshly ground black pepper

Steps:

  • Combine the garlic, jalapeno and vinegar in a bowl. Stir in the parsley, oregano, and lime juice. Whisk in the olive oil and season with salt and pepper. Mix well and set aside at room temperature to allow the flavors to marry.
  • Marinate the steak in olive oil for 30 minutes, turning to coat both sides.
  • Preheat an outdoor charcoal grill or oven broiler to high. Remove the steak from the oil and season both sides with a generous amount of salt and pepper; you should see the seasoning on the meat. 4 bay leaves

Steps:

  • Preheat a grill or broiler to high.

3 red onions, peeled and sliced 1/2-inch thick
1/4 cup extra-virgin olive oil, for brushing
3 pounds skirt steak
Chili Water, recipe follows
8 fresh pita breads
4 vine-ripened tomatoes
1/2 pound blue cheese
1/2 cup plus 1 teaspoon Chimichurri Sauce, recipe follows
1 tablespoon smoked paprika
2 tablespoons salt
1 cup warm water
1 bunch fresh flat-leaf parsley, finely chopped
2 bay leaves
6 cloves garlic, minced
1 1/2 teaspoons smoked paprika
1 tablespoon fresh oregano leaves, finely chopped
1/2 cup red wine vinegar
1 1/2 cups extra-virgin olive oil
1 teaspoon salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Prepare a medium-hot fire in the grill.
  • Lightly brush the onion slices with olive oil. Place on the grill and cook about 6 to 8 minutes. Transfer to a platter and reserve. Place the steaks on the grill. Baste a couple of times with Chili Water and cook until done, about 4 to 6 minutes on each side. Transfer to a platter.
  • Lightly brush the pita bread with olive oil and grill for 1 minute to heat through.
  • Slice the tomatoes into 1/4-inch slices and then cut the slices in half. Lay out the pita bread on 2 sheet pans and crumble the blue cheese on top. Transfer to the oven to keep warm. Slice the meat lengthwise into 1/2-inch slices and put into a bowl. Toss the meat with 1/2 cup Chimichurri Sauce. Remove the pita from the oven and divide the meat between them. Place the sliced tomatoes on the side of the meat and top all with rings of grilled onion. Spoon the remaining 1 teaspoon of Chimichurri Sauce over top and serve.
  • Mix all ingredients together.
  • Place the parsley, bay leaves, garlic, paprika, oregano, vinegar, olive oil, salt, and pepper in a food processor. Pulse until combined. Put the sauce in a glass or plastic container, using as needed. Chimichurri will last for up to 1 month, refrigerated.

4 (10 -12 ounce) beef strip steaks
1 cup dinosaur bbq mojito marinade
1 bunch fresh Italian parsley
10 -12 garlic cloves, coarsely chopped
3 -4 tablespoons fresh lemon juice (about 1 lemon)
1 teaspoon red pepper flakes
2 teaspoons kosher salt
1 teaspoon ground cumin
1 teaspoon dried oregano
1 cup extra virgin olive oil

Steps:

  • Start early in the Morning, remove the boot strap tendon sometimes found on the outside edge of the steaks.
  • Pour on marinade and let them stand all day.
  • Using parsley leaves fill measuring cup to make 1 full packed cup.
  • Mix together all sauce ingredients except oil in a food processor or blender to form a paste.
  • Dribble in a little oil at a time until fully blended.
  • Taste, add more seasonings if desired.
  • Set aside.
  • Take steaks out of marinade and pat dry.
  • Grill on hot grill until medium-rare (Ok, Hubby teases me, I like mine a little more done than that).
  • Serve with some sauce spooned over each steak.

1/2 cup extra virgin olive oil (Use 1/4 cup and work up if necessary)
2/3 cup sherry wine vinegar
2 tablespoons lemon juice
1 cup chopped flat leaf parsley
4 tablespoons chopped fresh basil leaves or 1 -2 tablespoon italian seasoning
1 tablespoon chopped fresh oregano leaves
3 tablespoons minced garlic
2 tablespoons minced shallots
3/4 teaspoon fresh cracked black pepper
2 1/2 teaspoons kosher salt
1/4 teaspoon crushed red pepper flakes
1 (1 3/4-2 lb) skirt steaks

Steps:

  • In the bowl of a food processor, combine the olive oil, sherry wine vinegar, lemon jucie, parsley, basil, oregano, garlic and shallots.
  • Pulse until well blended but do not puree.
  • Add 1/4 teaspoon of the black pepper, 1/2 teaspoon salt & the crushed red pepper flakes.
  • Remove 1 cup of the chimichurri sauce from the processor and transfer to a non-reactive bowl, cover with plastic wrap and reserve at room temperature for up to 6 hours. (Can be made the day before.).
  • If cooking steak another day, refrigerate sauce and return to room temperature before serving.
  • Season the steak with 1 teaspoon salt on each side, as well 1/4 teaspoon of the black pepper per side and place in a large resealable plastic bag.
  • Add the remaining chimichurri sauce from the processor.
  • Seal bag and refrigerate the steak for at least 2 and up to 4 hours.
  • Preheat a grill or oven to 350F - medium heat.
  • Once the steak has finished marinating, remove it from the refrigerator and let it come to room temperature for 30 minutes.
  • Brush the excess chimichurri sauce off the steak and set the steak over the hot grill or oven.
  • Cook for 6 minutes on the first side.
  • Rotate the steak 45 degrees and cook another 6 minutes.
  • Turn the steak over and continue to cook until the steak is done, about 6-8 minutes for medium-rare.
  • Once cooked, lay the steak on a clean cutting board, and allow it to rest for 5 to 7 minutes before slicing across the grain into 2-inch wide strips.
  • Serve with crusty "warm" bread, the reserved chimichurri sauce, baked potatoes & some nice greens.

1 tablespoon olive oil, plus more for grill pan
2 cloves garlic, crushed
3 sprigs flat-leaf parsley
2 large ripe tomatoes, cut into wedges, for serving (optional)
1 small red onion, thinly sliced, for serving (optional)
1 bunch watercress, washed, dried, and coarsely chopped, for serving (optional)
Sea salt and freshly ground black pepper
1 cup olive oil
1/4 cup white vinegar
2 cloves garlic, finely chopped
1 small bunch flat-leaf parsley, leaves removed and chopped
1 small white onion, finely chopped (about 1/4 cup)
1 tablespoon smoked Spanish paprika
1 teaspoon dried oregano
Sea salt and freshly ground black pepper

Steps:

  • Prepare chimichurri sauce: Combine all chimichurri ingredients in the bowl of a food processor. Process 1 minute; season with salt and pepper. Chimichurri sauce may be stored in a covered container in the refrigerator for up to 1 week.
  • Prepare steak: Pound skirt steak flat with a meat pounder. Transfer steaks to a shallow dish. Add 1 tablespoon oil, garlic, and parsley; turn steaks to coat. Marinate in refrigerator at least 2 hours and up to overnight.
  • Preheat a grill pan. Brush grill pan with oil. Remove steaks from marinade, and season with salt and pepper. Place steaks on grill, and cook 2 to 3 minutes. Turn, and continue cooking to desired degree of doneness. Transfer steaks to a cutting board; let stand 10 minutes.
  • Thinly slice steaks crosswise. Divide evenly between 4 plates and drizzle with chimichurri sauce. Serve with tomato wedges, onion, and watercress.

1 beef flank steak (1 1/2 lb)
1/4 cup chopped fresh parsley
1 cup vegetable oil
1/2 cup white wine vinegar
1/2 cup lemon juice
1 teaspoon crushed red pepper flakes

Steps:

  • Make cuts about 1/2 inch apart and 1/8 inch deep in diamond pattern in both sides of beef. Place beef in shallow glass or plastic dish or resealable food-storage plastic bag.
  • To make sauce, in tightly covered container, shake all remaining ingredients. Pour 1 cup of the sauce over beef; turn beef to coat with sauce. To marinate, cover dish or seal bag and refrigerate at least 4 hours but no longer than 24 hours, turning beef occasionally. Cover remaining sauce and set aside to serve with beef.
  • Spray grill rack with cooking spray or brush with oil. Heat coals or gas grill for medium heat. (Check the temperature of the coals by placing your hand, palm side down, near but not touching the cooking grill rack. If you can keep your hand there for two seconds (one-thousand one, one-thousand two), the temperature is high; three seconds is medium-high; four seconds is medium; five seconds is low.)
  • Remove beef from marinade; set marinade aside. Grill beef uncovered 12 to 16 minutes for medium doneness, brushing with marinade and turning once. Discard any remaining marinade. Cut beef diagonally across grain into thin slices. Serve with remaining sauce.

1/4 cup extra virgin olive oil
2 cups fresh parsley, finely chopped
3 tablespoons fresh oregano, finely chopped
2 tablespoons red wine vinegar
2 garlic cloves, minced
1/2 teaspoon red pepper flakes
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 1/2 lbs skirt steaks, 1/2 inch thick, trimmed of fat, and cut into 4 equal pieces
1 tablespoon virgin olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • For the sauce, mix oil, parsley, oregano, vinegar, garlic, red pepper flakes, salt, and pepper in a bowl; set aside.
  • For the steak, heat a large heavy skillet over high heat until very hot.
  • Brush steak with oil and season with salt and pepper.
  • Add steak to pan, reduce heat to med-high, and sear until done to taste, about 3 min per side for med-rare.
  • Transfer steak to cutting board and let stand 5 minute.
  • Thinly slice across the grain.
  • Stir sauce again and serve steak with sauce on the side.

GRILLED STEAK TACOS WITH AVOCADO CHIMICHURRI SAUCE image

1.75 lbs sirloin steak (2 good size steaks)
2 sweet onions, sliced thick to barbeque
2 different colored bell peppers, sliced 1/2 inch
Olive oil
Salt and Pepper
Marinade and base for Avocado Sauce
6 cloves garlic, minced
1 scallion, minced
1 cup extra virgin olive oil
1 tbsp Champagne vinegar (or white wine vinegar would do
1 ½ tsp cumin
1 teaspoon red pepper flakes
1 tsp salt
Finish the sauce with:
¼ cup chopped parsley
½ tsp minced jalapeno
2 avocados, diced close to serving time
1 tbsp lime juice
To make the tacos:
12 corn or flour tortillas
sour cream
lettuce or other salad greens
Chopped cilantro
refried beans

Steps:

  • 1. Combine the marinade ingredients in a bowl (the garlic through cumin and salt). Place the steaks in a large sealable plastic bag, then pour in 1/3 cup of the marinade mixture into the bag. 2. Set aside the rest of the marinade. Seal the bag, and gently toss the steak around with the marinade to get it well-coated. Refrigerate for at least 2 hours. About 4 hours is optimal. 3. Finish the avocado sauce by taking the remaining marinade that you set aside, stir in the parsley, jalapeno, and lime juice into the reserved marinade. Salt and pepper.......do not forget this! 4. You can have all this ready to go well before your dinner, then stir in the diced avocados closer to serving time. 5. Grill the peppers and onions until nice and charred. This gives them a great smokey flavor. Set aside. This can be done 2 hours before you finish the meat. 6. Now, you've got the preliminaries taken care of, it's time to grill that steak! Take the steak out of the fridge 15 minutes before grilling time and pre-heat the grill to medium high. Shake the excess marinade off the steaks, then place them on the grill. For medium rare, which I recommend for this cut, grill 5 to 6 minutes on one side, then flip over to grill another 5 minutes on the other side. 7. Remove the the steak to a serving platter. Slice the steak thin after it has rested a few minutes, and have it ready to go on the taco bar. 8. You can set up the rest of the items on the taco bar as the steak grills. Line up the tortillas, steak, avocado sauce, onions/peppers, sour cream, lettuce and beans and let folks build their own tasty creations. I like to go through the line first and point out the items people can choose from so they don't miss anything. Enjoy your taco party!
