1 tablespoon vegetable oil
2 pounds ground chicken
3 (15 ounce) cans pinto beans, rinsed and drained
2 onions, halved and thinly sliced
1 (14.5 ounce) can diced tomatoes with juice
1 (14.5 ounce) can Mexican-style stewed tomatoes with chiles, undrained
½ cup water
2 tablespoons brown sugar
2 tablespoons chili powder
2 tablespoons vinegar
2 tablespoons prepared mustard
2 teaspoons salt
¼ teaspoon ground black pepper

Steps:

  • Heat vegetable oil in a soup pot over medium heat. Cook and stir ground chicken in the hot oil until no longer pink and the chicken is crumbly, about 10 minutes. Drain.
  • Stir in pinto beans, onions, diced tomatoes, Mexican-style stewed tomatoes, water, brown sugar, chili powder, vinegar, mustard, salt, and black pepper; bring to a boil. 1 1/2 cups low-sodium canned vegetable juice
1 can (14 1/2 ounces) diced tomatoes and green chiles
1 cup reduced-sodium canned chicken broth
1/2 cup quick pearled barley
1 can (15 ounces) black beans, drained and rinsed

Steps:

1 1/2 lb lean ground beef
1 small onion chopped
1 clove garlic minced
1/2 c green pepper
2 can(s) diced tomatoes
2 can(s) chili flovored beans in can or pintos
1 can(s) kidney beans
1 c brewed coffee , opt
1 c ketchup
2 Tbsp worchestershire sauce
2 Tbsp chili powder
1 Tbsp cumin
2 tsp paprika
1 Tbsp salt
2 tsp black pepper
2 Tbsp brown sugar

Steps:

  • 1. In a large skillet with one tablespoon oil, sweat onions,green peppers and garlic put in small bowl. add ground beef in skillet and brown then drain.
  • 2. In large stock pot add the tomatoes and drained beans ,add the onions mixture,ketchup and worch.sauce and the spices and the coffee .
  • 3. add the brown sugar and the ground beef add the salt and pepper . let simmer for at least 30 minutes.
  • 4. this is good with a spoon of sour cream
