CHILLI AND HONEY SAUSAGE BITES

Chilli and Honey Sausage Bites image

A favourite in our house either at parties or just because we fancy a 'picky food' evening meal - very easy to adapt to your personal preference for heat and flavour by substituting hot sauce for sweet chilli, or a chutney or relish in lieu of honey for a fruity edge. You could even use speciality sausages but I use just 'bulk' frozen from the supermarket. Quantity makes enough for 4-6 pieces for 6 people

Categories     Lunch/Snacks

Time 10m

Yield 32 pieces, 6 serving(s)

Number Of Ingredients 4

8 sausages
2 tablespoons honey
1 tablespoon sweet chili sauce
1 tablespoon sesame seeds

Steps:

  • Grill/broil the sausages until cooked. Once cooked, cut each sausage into 3 - 5 pieces, depending on sausage size and how delicate you want your 'bites' to be!
  • Put the honey and chilli sauce in a pan and warm on a low heat. When it starts to lightly bubble, add the sausage pieces and toss in the sauce for a few minutes. Do not overheat or cook for a long time or the honey-chilli mix will turn to brittle toffee and you'll have burnt toffee-sausages when they cool.
  • Toast the sesame seeds in a dry pan on a low heat for a couple of minutes, tossing regularly. Tip the sausages into a serving bowl and sprinkle the seeds over the top. Serve slightly warm for best flavour.

Provided by Merrilees Parker

Categories     Buffet, Canapes, Side dish

Time 45m

Number Of Ingredients 5

2 tbsp sunflower oil
48 cocktail sausages, separated if linked
3 tbsp clear honey
3 tbsp wholegrain or Dijon mustard
ketchup and mustard, to serve

Steps:

  • Preheat the oven to 200C/Gas 6/fan oven 180C. Pour the oil into a large roasting tin and heat in the oven for 3-4 minutes. Tip the sausages into the roasting tin and toss to lightly coat in the oil. Roast for 20-25 minutes or until browned and cooked through.
  • Drain the sausages well on kitchen paper, then tip them into a clean roasting tin. Blend the honey and mustard together in a small bowl, pour over the sausages and stir and shake them so they become coated. Return to the oven for 5 minutes, turning them over halfway. Serve hot or warm, with cocktail sticks and little pots of ketchup and mustard for dipping.

Gather round the campfire and serve this chilli one-pot with tortilla chips for scooping up the smoky beans and sausages. Or, enjoy with a jacket potato or rice

Provided by Cassie Best

Categories     Dinner

Time 1h10m

Number Of Ingredients 14

2 tbsp vegetable oil
8 sausages of your choice
1 large onion (red or white), finely chopped
2 peppers (red, orange or yellow, or a mixture), sliced
3 garlic cloves, crushed
1 tbsp smoked paprika
1 tsp ground coriander
1 tsp ground cumin
1 heaped tbsp chipotle paste (optional)
400g chopped tomatoes
2 tbsp ketchup
400g can black beans, drained
handful of coriander, leaves picked, to serve (optional)
grated cheddar, natural yogurt or soured cream, and tortilla chips, jacket potatoes or rice, to serve

Steps:

  • Heat half the oil in a large pan and cook the sausages for 12-15 mins over a medium heat until brown all over and cooked through. Remove to a plate.
  • Drizzle the rest of the oil into the pan and cook the onion and peppers for 10 mins, over a low heat stirring often until all the veg has softened.
  • Stir in the garlic, all the spices and the chipotle paste, if using, and cook for another minute. Add the tomatoes, a canful of water, the ketchup and some seasoning. Bring to a simmer and cook for 20 mins half-covered with a lid or loosely covered with foil. Stir occasionally, topping up with water if the mixture starts to look too thick.
  • Slice the cooked sausages into thick coins and return to the pan, then tip in the beans. Tips:

  • Choose the right sausage: For the best flavor, use a high-quality sausage that is well-seasoned. Look for a sausage that is made with a blend of pork and beef, and that has a nice balance of spices.
  • Cook the sausage thoroughly: Sausage should be cooked to an internal temperature of 160 degrees Fahrenheit. This will ensure that the sausage is safe to eat and that it has the best flavor.
  • Use a good quality honey: The honey you use in this recipe will make a big difference in the overall flavor of the dish. Choose a honey that is dark and flavorful, such as buckwheat honey or manuka honey.
  • Don't overcook the honey: When you are cooking the honey, be careful not to overcook it. Overcooked honey will become bitter and will not taste good.
  • Serve the sausage bites hot: Sausage bites are best served hot, right out of the oven. They can be served with a variety of dipping sauces, such as honey mustard, barbecue sauce, or ranch dressing.

Conclusion:

These chili and honey sausage bites are a delicious and easy-to-make appetizer that is perfect for any occasion. They are made with just a few simple ingredients, and they can be cooked in under 30 minutes. The sausage bites are crispy on the outside and tender on the inside, and they are coated in a sweet and spicy chili and honey glaze. Serve them with your favorite dipping sauce, and enjoy!
