This is the BEST Chili Recipe! Made with bacon (and the option to omit if necessary) and ground beef and simmered on the stove for just 30 minutes, this is my family's go-to cold weather comfort food. It's even better when paired with a side of buttermilk cornbread!

5 strips uncooked bacon (chopped¹)
1 large yellow onion (diced (about 1 cup))
1 red pepper (diced)
3 cloves garlic (minced (about 1 Tablespoon))
1 lb ground beef ((455g) (I use 90% but any will work))
1 Tablespoon brown sugar
1 Tablespoon chili powder²
1 Tablespoon ancho chili powder²
1 ½ teaspoons smoked paprika
1 teaspoon cumin
1 teaspoon onion powder
¾ teaspoons ground black pepper
½ teaspoon salt
⅛ teaspoon cayenne pepper³
1 ¼ cup beef broth ((295ml))
15 oz can dark red kidney beans (lightly rinsed and drained (425g))
15 oz can black beans (lightly rinsed and drained (425))
14.5 oz can diced fire roasted tomatoes (undrained (411g))
7- oz can fire roasted green chilis ((198g))
¼ cup tomato paste ((66g))
1 Tablespoon Worcestershire sauce
Preferred toppings (particularly sour cream, shredded cheddar cheese, and corn chips)

Steps:

  • Place chopped (uncooked) bacon in a large pot or Dutch oven and cook over medium heat until crisp and cooked through. Remove bacon to a paper towel lined plate and drain all but 1 ½ Tablespoons of grease.
  • Add onion and pepper and cook until softened, about 3-5 minutes.
  • Add garlic and cook until fragrant (about 30 seconds).
  • Add beef, breaking apart with a spatula as you cook. Once meat is partially (about 50%) browned, add sugar and all spices (chili powders, paprika, cumin, onion powder, black pepper, salt, cayenne pepper) and stir well.
  • Add all remaining ingredients -- beef broth, beans, tomatoes, tomato paste, chilis, and Worcestershire sauce -- and your cooked bacon and stir well.
  • Bring to a boil and cook 1-2 minutes, stirring frequently.
  • Reduce heat and simmer, uncovered, stirring occasionally. Simmer for 30 minutes to allow flavor to really develop.
  • Serve with preferred toppings (sour cream, shredded cheddar cheese, and corn chips are a must!)

1 tablespoon salted butter
4 slices bacon, finely chopped
1 medium onion, diced
1 large clove garlic, diced
1 pound lean ground beef
1 tablespoon dark red chili powder
1 ½ teaspoons dark red chili powder
1 ½ teaspoons smoked paprika
1 ½ teaspoons ground cumin
1 teaspoon salt
½ teaspoon cayenne pepper, or more to taste
1 (14.5 ounce) can fire-roasted diced tomatoes
1 (12 fluid ounce) can or bottle beer
1 (8 ounce) can tomato sauce
1 teaspoon Worcestershire sauce
1 teaspoon chipotle hot sauce, or more to taste
1 (16 ounce) can black beans
1 (16 ounce) can red kidney beans

Steps:

  • Melt butter in a large pot over medium heat. Add bacon and cook until bacon begins to brown, about 4 minutes. Add onion, cover, and cook until translucent, 4 to 8 minutes. Add garlic; cook and stir for 2 minutes.

6 slices thick-cut applewood smoked bacon, cut into 1/2-inch pieces
4 cloves garlic, finely chopped
2 medium onions, finely chopped
1 red bell pepper, chopped
1 yellow bell pepper, chopped
3 tablespoons chili powder
1 tablespoon ground cumin
1 tablespoon chipotle chili powder
2 teaspoons dried oregano
1 tablespoon smoked paprika
Salt and freshly ground black pepper
1 pound 85 percent lean ground beef
1 pound ground pork
1 cup beer (recommended: Budweiser)
One 15-ounce can black beans, drained and rinsed
One 15-ounce can kidney beans, drained and rinsed
One 24-ounce can crushed tomatoes
One 24-ounce can diced tomatoes, with juice
Lime wedges, for garnish

Steps:

  • In large heavy-bottomed Dutch oven, cook the bacon over medium heat until lightly crisp, stirring occasionally. Once the bacon is browned, add the garlic, onions, bell peppers, chili powder, cumin, chipotle chili powder, oregano, and smoked paprika and season with salt and pepper, to taste. Turn the heat down to low and simmer for 1 1/2 hours. Taste for seasoning and add salt and pepper, if necessary. Transfer the chili to serving bowls and garnish with lime wedges, sour cream, shredded cheese, and sliced scallions.
