Time 2h30m

Number Of Ingredients 13

2 lb stewing beef (cut into bite-sized pieces)
1 teaspoon EACH: salt and pepper
2 tablespoons oil (divided)
1 large onion (minced)
4 cloves garlic (minced)
2 stalks celery (minced)
5.5 ounce can tomato paste
3 tablespoons chili powder (see notes)
1 teaspoon EACH: oregano and cumin
3 cups beef bone broth (see notes)
28 ounce can crushed tomatoes
2 tablespoons honey
14 ounce can kidney beans (drained and rinsed (omit for paleo chili))

Steps:

  • Dry the beef well with paper towels then sprinkle the salt and pepper over the top.

  • Just before serving, add the beans and let them warm. Season to taste with salt.

Tips:

  • Tenderize the Meat: For extra-tender Swiss steak, consider using a meat mallet to tenderize the steak before cooking. This will help break down the fibers and make the steak more tender when cooked.
  • Use a Dutch Oven: A Dutch oven is a great choice for cooking Swiss steak because it distributes heat evenly and can easily accommodate the steak and vegetables.
  • Brown the Steak: Before braising the steak, brown it in a pan over medium-high heat. This will give the steak a nice caramelized flavor and help develop a rich sauce.
  • Add Vegetables: Along with the steak, add some vegetables to the Dutch oven. Common choices include onions, carrots, celery, and mushrooms. The vegetables will add flavor and texture to the dish.
  • Simmer the Steak: Once the steak and vegetables are browned, add some liquid to the Dutch oven and bring it to a simmer. Cover the pot and let the steak simmer for 1-2 hours, or until it is tender.
  • Thicken the Sauce: If you want a thicker sauce, you can add a cornstarch slurry (equal parts cornstarch and water) to the Dutch oven towards the end of cooking. Stir until the sauce has reached your desired consistency.
  • Serve Over Mashed Potatoes or Rice: Swiss steak is traditionally served over mashed potatoes or rice. The potatoes or rice will help soak up the delicious sauce.

Conclusion:

Swiss steak is a classic comfort food that is easy to make and always a hit with the family. With its tender steak, flavorful sauce, and simple ingredients, it's no wonder this dish has been enjoyed for generations. Whether you're looking for a hearty meal on a cold winter night or a delicious dish to share with friends, Swiss steak is sure to satisfy.
