This steak chili is the best beef chili recipe ever. That's a big statement, but it's true. It has a rich flavor and the tender chunks of slow-cooked chuck steak are dreamy. We go easy on the beans, but you can either omit them or add extra as you like. You'll want to keep this steak chili recipe in your back pocket so you can pull it out every weekend.

2 lb stewing beef (cut into bite-sized pieces)
1 teaspoon EACH: salt and pepper
2 tablespoons oil (divided)
1 large onion (minced)
4 cloves garlic (minced)
2 stalks celery (minced)
5.5 ounce can tomato paste
3 tablespoons chili powder (see notes)
1 teaspoon EACH: oregano and cumin
3 cups beef bone broth (see notes)
28 ounce can crushed tomatoes
2 tablespoons honey
14 ounce can kidney beans (drained and rinsed (omit for paleo chili))

Steps:

  • Dry the beef well with paper towels then sprinkle the salt and pepper over the top.
  • Heat 1 tablespoon of the oil in a large pot over medium-high heat. Add half of the beef and brown well on 2 sides. Remove it from the pan and repeat with the remaining beef, adding more oil as needed. Remove the second batch of browned beef from the pot.
  • Add the remaining tablespoon of oil to the pan. Add the onion and cook until it is soft and starts to brown, about 5 minutes. Add the garlic and celery and cook for 2 minutes.
  • Push the veggies to the side of the pan and add the tomato paste. Let it cook for 2-3 minutes, or until it becomes sweet smelling. Add the chili powder, oregano, and cumin to the pot and mix.
  • Pour the beef broth into the pot and scrape the bottom of the pot with your mixing spoon to remove any of the dark stuck on bits. Add the crushed tomatoes, honey, and browned beef and bring the pot to a boil. Reduce the heat to low and cover the pot. Very gently simmer the steak chili for 2 hours. (See notes)
  • Just before serving, add the beans and let them warm. Season to taste with salt.

1 tablespoon lime juice
1 teaspoon brown sugar
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon salt, divided
1 beef top sirloin steak (1-1/4 pounds)
1 medium onion, halved and sliced
1 medium green pepper, cut into strips
1 medium sweet yellow pepper, cut into strips
2 teaspoons olive oil
1 small garlic clove, minced
1/8 teaspoon pepper
1/4 cup reduced-fat sour cream
1 teaspoon prepared horseradish

Steps:

  • Combine the chili sauce, lime juice, brown sugar, pepper flakes and 1/4 teaspoon salt; brush over steak. Broil steak 4-6 in. from the heat for 5-7 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°)., Meanwhile, in a large skillet, saute onion and green and yellow peppers in oil until tender. Add the garlic, pepper and remaining salt; cook 1 minute longer. In a small bowl, combine sour cream and horseradish. Slice steak and serve with pepper mixture and sauce.

2 tablespoons olive oil
2 pounds steak - cut into 1 inch cubes
2 onions, chopped
3 cloves garlic, minced
1 green chile pepper
2 tablespoons chili powder
1 tablespoon ground cumin
1 ½ teaspoons ground cayenne pepper
2 (29 ounce) cans diced tomatoes
1 (15 ounce) can kidney beans, drained

Steps:

  • In a large pot over medium high heat, combine the oil and steak and saute for about 5 minutes, or until steak is browned. Add the onions, garlic and chile pepper and saute for another 5 minutes, or until the onions are translucent.
  • Add the chili powder, cumin, cayenne pepper, tomatoes and kidney beans. Reduce heat to low, cover and simmer for about one hour. Remove cover and simmer for another 30 minutes, or until you've reached your desired thickness.

2 tablespoons Thai sweet chili sauce (if you don't have Asian chili sauce, I am sure other chili sauce or even salsa will work)
1 1/2 tablespoons soy sauce
2 teaspoons balsamic vinegar
2 teaspoons gingerroot, grated
2 (10 ounce) New York strip steaks
1 1/2 tablespoons vegetable oil
2 bell peppers, cut into 1/2 inch thick strips (I used one red and 1 green)
4 green onions, chopped
1/2 cup cilantro, chopped

Steps:

  • Preheat oven to 375-degrees F.
  • In a large bowl or marinating dish whisk together marinade ingredients (chili sauce - ginger); add steaks, turn to coat. Let stand at room temperature for 15 minutes, turning occasionally.
  • In an oven-proof skillet (I used my heavy cast iron skillet), heat 1/2 tablespoon of the vegetable oil over medium high heat.
  • Scrape marinade off of steaks (reserving it in the bowl) and salt and pepper steaks. Add steaks to skillet and cook until browned (3-5 minutes). Turn steaks and transfer skillet to oven. Roast until cooked to desired doneness (5-10 minutes). Transfer steaks to a cutting board - let rest 10 minutes.
  • Meanwhile, in another skillet heat remaining oil (1 tablespoon) over medium high heat. Add onions and bell peppers and cook stirring until crisp-tender (3-5 minutes). Stir in green onions and remaining marinade. Bring to a boil and stir in cilantro.
  • Cut steaks in half cross-wise and divide among 4 plates, spooning vegetables over top of steaks.

While searching for an authentic Texas Style Chili, I discovered this recipe from http://recipes.suite101.com/article.cfm/cowboy_steak_chili. There are so many chili recipes with many variations for all types of taste buds, but this one really knocked my socks off. While the chili recipe above will stand up even if all you add is chili powder, this mix will give it more complex depth of flavor. The idea comes from Cowboy Steak, where the essential "Cowboy" element is ground coffee. Was this the result of a creative campfire cook. Or some happy chuck wagon mistake? You can also use this seasoning to make Cowboy Steak. If you do, it is traditional to add onion powder and garlic powder to the mix. You may want to mix up enough to use later as a dry rub for ribs or chops or even chicken. If you do, bloom the mixture just before using. The only change I made was to cook the chili for 8 hours on low in the crock pot before serving. I truly believe that one of the secrets to good chili is a looooooonnnnngggg cooking time. YEEHAA

1 lb sirloin steak, cubed bite-size
4 slices bacon (or 3 Tbsp vegetable oil)
1 lb chorizo sausage (or ground pork)
2 medium onions, chopped
1 bell pepper, seeded and chopped
2 celery ribs, chopped
4 garlic cloves, smashed
1 (4 ounce) can diced green chilies
2 (16 ounce) cans kidney beans, drained and rinsed
1 (16 ounce) can corn (optional)
1 (16 ounce) bottle dark beer or 1 (16 ounce) bottle ale
1 (28 ounce) can chopped tomatoes
3 tablespoons chili powder
1 tablespoon coffee beans, dark freshly finely ground
1 tablespoon paprika
1 tablespoon ground cumin
1 tablespoon brown sugar
1/2 teaspoon salt
1/2 teaspoon dry mustard
1/2 teaspoon ground coriander
1/2 teaspoon fresh ground black pepper
1/4 teaspoon cayenne (or to taste)

Steps:

  • Turn the crock pot on to low.
  • Prepare the Cowboy Steak Seasoning following the separate recipe posting.
  • Roll cubed steak around in the seasoning mix until they are thoroughly coated.
  • In a large, heavy fry pan over medium high heat, brown off the bacon (if using) until crisp.
  • Remove and drain on paper towels or clean newspaper, reserving the drippings.
  • Brown the coated cubes of steak in the bacon drippings (or oil), working in batches if necessary.
  • Transfer browned steak to the crock pot.
  • Add the chorizo or pork and cook it down, stirring, for about 5 minutes.
  • Transfer the chorizo or pork to the crock pot.
  • Add all the "aromatics" to the fry pan and sweat them down, stirring frequently, about 5 minutes.
  • Transfer them to the crock pot.
  • Stir in all the "other good stuff" and the reserved bacon to the crock pot.
  • If there's not enough liquid to cover, add some beef stock or more beer. Put the lid on. Cook for @ 7 hours and then give it a taste and adjust the seasoning if needed and let it simmer at least another hour. The longer the better!

1 small sweet yellow pepper, cut into 2-inch strips
2 cups grape tomatoes
1 small onion, cut into 1/2-inch wedges
2 jalapeno peppers, halved and seeded
2 tablespoons olive oil, divided
3/4 teaspoon salt, divided
3/4 teaspoon pepper, divided

1 beef flank steak (1-1/2 pounds)
2 to 3 teaspoons lime juice
