Number Of Ingredients 6

3 cups (12 ounces) shredded Monterey Jack cheese
1-1/2 cups (6 ounces) shredded cheddar cheese
2 cans (4 ounces each) chopped green chilies, drained
2 eggs
2 tablespoons milk
1 t.ablespoon all-purpose flour

Steps:

  • Layer cheeses and chilies in a greased 8-in. square baking dish, starting and ending with cheese. In a bowl, beat the eggs. Add the milk and flour; pour over cheese. Bake at 375 degrees for 30 minutes or until set. Cut into small squares. Serve warm.

Tips:

  • Use fresh poblano peppers for the best flavor. Roast them over an open flame or under a broiler until the skin is blackened. Then, place them in a paper bag for 15 minutes to steam. Once cool enough to handle, peel off the skin and remove the seeds.
  • Use a combination of cheeses for the filling. A blend of cheddar, mozzarella, and cream cheese works well. For a spicier filling, add some diced jalapeños or chipotle peppers.
  • To make the batter, whisk together flour, cornstarch, baking powder, salt, and pepper. Then, add in eggs, milk, and melted butter. Mix until just combined. Do not overmix, or the batter will be tough.
  • When frying the chili relleno squares, use a large skillet with plenty of hot oil. Fry the squares in batches until they are golden brown and crispy on all sides.
  • Serve the chili relleno squares with your favorite toppings. Some popular choices include salsa, sour cream, guacamole, and Pico de Gallo.

Conclusion:

Chili relleno squares are a delicious and easy-to-make appetizer or main course. They are perfect for parties or potlucks. With their crispy outer shell, gooey cheese filling, and flavorful poblano peppers, chili relleno squares are sure to be a hit with everyone who tries them.
