Steps:

  • Add the olive oil to a large soup pot and place it over medium-high heat for two minutes. Add the onion. Cook for 5 minutes, stirring occasionally.
  • Add the ground beef to the pot. Break it apart with a wooden spoon. Cook for 6-7 minutes, until the beef is browned, stirring occasionally.

4 guerito chilis
4 serrano chilis
4 jalapeno chilis
1 red bell pepper
1 red onion
2 can(s) 30 oz kidney beans
3 can(s) mexican stewed tomatos
1 clove fresh garlic
1 1/2 lb beef stew meat
1 Tbsp mexican oregano
1 tsp chipotle or cayenne pepper
1 Tbsp adobo seasoning
1 Tbsp parsley flakes
1 tsp paprika, sweet mild
1 tsp sugar

Steps:

  • 1. flour stew meat and brown in hot oil and put in crock pot. dice all chilis add one cup water all chilis and all seasonings. bring to boil on high setting stir and turn to low.
  • 2. cook 6 to 8 hours. turn to warm and put stewed tomatos and beans in pot on stove heat to boil then simmer 20 minutes.
  • 3. when stew meat is fork tender add beans and tomatos heat on high to boil then stir and turn to low.
  • 4. normally would put soaked beans and cook with meat, but easier and tasty to cook your meat and taste then just add canned beans fix this to your liking!
  • 5. add red bellpepper and chopped red onion last hour of cooking

2 - 2 1/2 lb lean ground chuck
1 large onion, diced (i used a texas sweet onion)
2 clove garlic, chopped fine
2 tsp each:
onion powder
paprika
ground cumin
ground corriander
mexene brand chili powder
couple dash(es) red pepper flakes (or to taste)
black pepper, to taste
salt, to taste (i leave out)
1 4 oz can, green chilies, drained
1 15 oz can, bushes seasoned black beans, drained
1 15 oz can, dark red kidney beans, drained
1 15 oz can, light red kidney beans, drained
2 15 oz cans, stewed tomatoes
2 15 oz cans, diced tomatoes
1 15 oz can, tomato sauce
1 4 oz can, tomato paste
1-2 small individual size cans, v8 juice, (i was out of 48 so i used 1/4-1/2 c. water

Steps:

  • 1. In large soup pot, brown ground chuck, stirring to break meat up, add chopped onion and garlic while meat is browning. Once meat has browned, add spices, green chilies, tomato paste and beans; mix well until paste is incorporated. Add stewed tomatoes, diced tomatoes, tomato sauce and V8 juice; mix well. Let simmer over low heat with lid ajar until desired thickness is achieved. Stir occasionally so the chili doesn't stick to bottom of pan.
  • 2. I let simmer for 3-4 hrs while I'm on justapinch, mixing it up with my JAP friends. The longer it simmers the better it will taste.
