Steps:
- Place the ground beef in a large pot and throw in the garlic. Cook over medium heat until browned. Drain off the excess fat, and then pour in the tomato sauce, chili powder, cumin, oregano, salt and cayenne. Stir together well, cover, and then reduce the heat to low. Simmer for 1 hour, stirring occasionally. If the mixture becomes overly dry, add 1/2 cup water at a time as needed.
- After an hour, place the masa harina in a small bowl. Add 1/2 cup water and stir together with a fork. Dump the masa mixture into the chili. Stir together well, and then taste and adjust the seasonings. Add more masa paste and/or water to get the chili to your preferred consistency, or to add more corn flavor. Add the beans and simmer for 10 minutes. Serve with shredded Cheddar, chopped onions, tortilla chips and lime wedges.
THE BEST CHILI
There are a thousand ways to make chili, but this is the quintessential, totally classic version. We used ground beef, kidney beans and the perfect blend of spices. You can slather it on hot dogs and burgers or serve it as a dip, but it can surely stand on its own. Chances are, you have everything you need right in your pantry. Top it with your favorite garnishes and serve with plenty of tortilla chips.

- Heat 2 tablespoons of the oil in a Dutch oven or large pot over medium-high heat. Add the beef and cook, breaking up the meat with a wooden spoon, until just browned, about 4 minutes. Transfer to a plate with a slotted spoon.
- Reduce the heat to medium and add the remaining 2 tablespoons oil. Add the onions and cook, stirring occasionally, until softened and lightly golden, about 10 minutes.
- Add the jalapeno and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring frequently, until fragrant, about 30 seconds.
- Add the chili powder, cumin, paprika, cayenne, 1/2 teaspoon salt and the tomato paste. Cook, stirring frequently, until coated and fragrant, about 1 minute.
- Stir in the beef broth and crushed tomatoes and bring to a boil over high heat. Stir in the cooked ground beef and any accumulated liquid, then reduce the heat to medium-low. Simmer the chili, partially covered, until the beef is tender and the sauce is slightly thickened, about 30 minutes.
- Stir in the beans and their liquid and simmer uncovered until the beans are softened and the chili is thickened, about 30 minutes more. Season with salt and pepper.
- Top with sour cream, Cheddar and scallions. Serve with tortilla chips.

Steps:
- 1. In large soup pot, brown ground chuck, stirring to break meat up, add chopped onion and garlic while meat is browning. Once meat has browned, add spices, green chilies, tomato paste and beans; mix well until paste is incorporated. Add stewed tomatoes, diced tomatoes, tomato sauce and V8 juice; mix well. Let simmer over low heat with lid ajar until desired thickness is achieved. Stir occasionally so the chili doesn't stick to bottom of pan.
- 2. I let simmer for 3-4 hrs while I'm on justapinch, mixing it up with my JAP friends. The longer it simmers the better it will taste.
Tips:
- Use Fresh Ingredients: The fresher the ingredients, the better the chili will taste. Whenever possible, use fresh vegetables, herbs, and spices. Opt for ripe tomatoes, crisp bell peppers, and aromatic onions.
- Brown the Beef Well: Browning the beef before adding it to the chili enhances its flavor and texture. Make sure to brown the beef in batches to prevent overcrowding the pan, which can result in steamed beef instead of browned beef.
- Don't Skimp on Spices: Chili is all about the spices! Use a generous amount of chili powder, cumin, paprika, and cayenne pepper. You can also add other spices like oregano, thyme, or chipotle powder to taste.
- Let the Chili Simmer: Simmering the chili allows the flavors to meld and develop. Aim to simmer the chili for at least 1 hour, or even longer if you have the time. The longer the chili simmers, the better it will taste.
- Serve with Toppings: Chili is the perfect canvas for a variety of toppings. Some popular options include shredded cheese, sour cream, diced onions, sliced jalapeños, and crushed tortilla chips.
Conclusion:
This simple and delicious chili recipe is sure to become a family favorite. With its hearty beef, flavorful spices, and customizable toppings, it's the perfect comfort food for any occasion. Whether you're serving it at a party or enjoying a cozy night in, this chili is sure to satisfy. So gather your ingredients, put on your apron, and get ready to make some darn good chili!
