Steps:

  • In a small saucepan, combine the orange juice, vinegar and honey; season with salt and pepper. Bring to a simmer and cook until thickened, syrupy and reduced by about two-thirds, 8 to 10 minutes. Add the chili powder and refrigerate until cooled completely, about 1 hour.

2 tablespoons neutral-flavored oil, such as grapeseed
1 medium yellow onion, coarsely chopped
Kosher salt
4 garlic cloves, coarsely chopped
1/2 teaspoon ground cumin
4 cups vegetable broth, plus more if needed
2 cups unsweetened almond milk
4 ripe medium Hass avocados, pitted, peeled and halved
1 packed cup cilantro, coarsely chopped
1/4 cup fresh lime juice (from about 2 limes)
4 teaspoons roasted salted pepitas, for serving

1/4 cup neutral-flavored oil, such as grapeseed

Steps:

  • Make the soup: Heat a medium pot over medium-low. Add the oil and heat, then add the onion and a pinch of salt. Cook, stirring occasionally, until translucent and slightly brown, 7 to 8 minutes. 1 small onion, chopped
1 tablespoon salt
1 quart orange juice, freshly squeezed
1 cup lime juice, freshly squeezed
1 tablespoon sugar
2 teaspoons salt
1/2 teaspoon black pepper
1 teaspoon garlic, chopped
2 tablespoons extra virgin olive oil or 2 tablespoons soybean oil
3 avocados, cut into 1/2 inch cubes
2/3 cup button mushroom, sliced 1/4 inch thick
2 cups plum tomatoes, diced without pulp
1 tablespoon cilantro, chopped (per serving)

Steps:

  • Cover the chopped onion with salt for 20 to 30 minutes.
  • Rinse the salt completely off the onion, drain and squeeze off excess water.
  • Mix salt, black pepper, orange juice, lime juice, garlic and sugar. Stir to mix well.

3 limes, juiced

3 large firm-ripe avocados, cut into chunks
