3/4 onion, finely chopped
1/3 cup saltine crumbs
1 egg, slightly beaten
3 tablespoons milk
1 tablespoon chili powder
3/4 teaspoon salt
3 cups potatoes, mashed and prepared
1 (11 ounce) can corn, whole kernel with red and green peppers, drained
1/4 cup green onion, thinly sliced
1/2-1 cup cheese, shredded taco seasoned

Steps:

  • 1. Preheat over to 375°F In large bowl combine ground beef, onion, cracker crumbs, egg, milk, chili powder and salt: mix well. Gently press mixture into bottom of 9-inch square baking pan. Bake 20-25 minutes or until no longer pink in center and juices run clear. Carefully pour off juices.
  • 2. Meanwhile, in medium bowl, combine mashed potatoes, corn with peppers and onions. Spread over meatloaf to edges of pan; sprinkle with cheese. Broil 3 to 4 inches from heat 3 to 5 minutes or until top is lightly browned.

1/4 Cup Jack Daniels® Honey Smokehouse Barbecue Sauce
1 Egg, lightly beaten
2 Teaspoons Chili Powder
3/4 Teaspoon Salt
1 Package Ore-Ida® Steam n' Mash Cut Russet Potatoes
2/3 Cup Canned Evaporated Milk
1 Tablespoon Butter
1 Tablespoon Chopped Fresh Flat-Leaf Parsley
1 Teaspoon Garlic Powder
1 Cup Cooked Bacon Crumbles
1/4 Cup Canned Crispy Fried Onions
2/3 Cup Shredded Mexican-style Cheese Blend

Steps:

  • 1.Preheat oven to 375°F. Coat 9x9 baking dish with nonstick cooking spray. In a large bowl, combine beef, onion, breadcrumbs, Barbecue Sauce, egg, chili powder and salt until well mixed. Gently press into bottom of baking dish.
  • 2.Bake uncovered for 20 to 25 minutes, or until cooked through. Remove from oven and carefully pour off any excess fat if needed. Adjust oven temperature to broil and place oven rack 6 to 8 inches from heat source.

1 egg
1/2 cup breadcrumbs
1/2 teaspoon salt
1/4 teaspoon pepper
2 teaspoons canola oil
1 large onion, chopped
1 sweet red peppers or 1 green pepper, chopped
1 tablespoon chili powder
1 cup drained red kidney beans
1/2 cup salsa
1/2 cup shredded cheddar cheese

Steps:

  • In a large bowl, beat egg with a fork.
  • Add bread crumbs, salt and pepper.
  • Gently mix in ground beef.
