1/2 lb hot Italian sausage link, cut in 1 inch pieces
1/2 lb ground beef
2 onions, chopped (medium)
1 green pepper, seeded and chopped
2 garlic cloves, minced
1 jalapeno pepper, seeded and chopped
2 teaspoons Worcestershire sauce
3 teaspoons chili powder
1/2 teaspoon dry mustard
1/4 teaspoon ground pepper
2 (14 ounce) cans Italian-style tomatoes
1 (16 ounce) can pinto beans, drained
1 (16 ounce) can kidney beans, drained

Steps:

  • In large skillet, brown bacon pieces til crisp.
  • Remove and drain well.
  • Brown sausage and ground beef with onions over medium heat.
  • Drain and add to crockpot.

1 lb ground beef
1 lb hot Italian sausage, cut into 1 inch slices
6 slices bacon
1 large onion, cut into bite sized chunks
1 green pepper, cut into chunks
2 -4 garlic cloves, minced
1 -2 jalapeno pepper, diced
1 cup red wine
1/2 cup Worcestershire sauce
1 teaspoon dry mustard
1 teaspoon celery seed
1 -2 tablespoon chili powder
1/2 teaspoon salt
1 1/2 teaspoons black pepper
6 cups roma tomatoes, skin removed
15 ounces kidney beans
16 1/2 ounces garbanzo beans (Chick peas)

Steps:

  • Brown bacon in a large cast iron skillet or Dutch oven. Drain and crumble bacon,set aside. Brown sausage,drain set aside with bacon. Brown ground beef, strain set aside. Pour excess fat from skillet.
  • Cook onion,pepper,garlic and chili pepper over low heat for 2-3 minutes.Stir in wine and Worcestershire sauce, simmer for uncovered for 10 minutes. Add the dry mustard,celery seed,chili power,salt,and pepper: simmer for 10 more minutes.
  • Mash tomatoes: add with liquid to onion mixture along with the meats. Heat to boiling,reduce heat and simmer uncovered for 1/2 hour stirring occasionally.
  • Stir beans with liquid into chili. Heat to boil, reduce heat, cover and simmer for 1 hour,stirring occasionally.

1 pound lean ground beef or stew beef
½ pound Hickory smoked bacon
1 large Spanish onion
2 cloves garlic
1 green bell pepper
2 14oz. cans tomatoes w/jalapenos
1 cup dark red wine
1 teaspoon Worcestershire sauce
1 teaspoon hot dry mustard
1 teaspoon celery seed
1 ½ teaspoons chili powder
½ teaspoon salt
1 ½ teaspoons black pepper
4 14 oz. cans diced tomatoes. (Italian)
1 16 oz. can kidney beans
1 16 oz. can pinto beans
1 16 oz. can garbanzo beans

Steps:

  • Sauté sausage, bacon, and ground beef in frying pan, one ingredient at a time. Discard grease and set aside. Cut onion, garlic and bell pepper into pieces and sauté in dutch oven or crock pot. Add El Paso tomatoes w/jalapenos, wine and Worcestershire sauce. Simmer 10 minutes. Add mustard, celery seed, chili powder, salt and pepper. Simmer another 10 minutes. Add the 7 cups of Italian tomatoes and the meat that was set aside. Heat to a boil and simmer for 30 minutes. Add pinto, kidney, garbanzo beans, heat to boil and simmer for 30 minutes. Correct seasonings and simmer for an additional 30 minutes. Re-heat and serve chili next day with your favorite bread.

2 tsp worcestershire sauce
1-3 tsp chili powder, to taste

1/4 tsp pepper
2 14-16oz cans italian style tomatoes
1 16oz can pinto beans drained
1 16oz can kidney beans drained

Steps:

  • In a large skillet, brown the bacon until crisp; drain well. Brown the sausage and chuck with onions; drain. Add all meats and ingredients to a crock pot. Be sure to add the chili powder slowly, tasting as you go and remembering that the sausage is hot. Stir, cover and cook on low setting for 6 to 10 hours. In a pot on top of the stove simmer about an hour.

10 oz. hot italian sausage
1 t. dry mustard
10 oz lean ground beef
1 cup red wine vinegar
Pinto beans-soaked as package directs
1 green pepper, diced
1/2 t. salt
1 t. celery seed
Pinch pepper
1 large red onion, diced
1/2 cup worchestershire sauce
1/2 jalepeno pepper, diced
6 cup canned tomatoes

Steps:

  • Brown bacon in large stock pot, pour bacon grease from pan leaving only a fine film. You may cook bacon in the microwave and just add a small amount of bacon grease to stock pot. Crumble bacon and set aside. In a seperate pan fry sausage and ground beef and set aside with bacon. Cook onion, green pepper, garlic and jalepeno in grease in stock pot over low heat for 2 to 3 minutes. Stir in mustard, celery seed, chili powder, salt and pepper, simmer 10 minutes. Mash tomatoes. Add with liquid and meat to onion mixture heat to boiling; reduce heat and simmer, covered 30 minutes stirring frequently. Stir beans with liquid into chili, heat to boiling.
