1 cup uncooked elbow macaroni
2 pounds lean ground beef (90% lean)
1 medium onion, chopped
2 garlic cloves, minced
1 can (28 ounces) diced tomatoes, undrained
1 can (16 ounces) kidney beans, rinsed and drained
1 can (6 ounces) tomato paste
1 can (4 ounces) chopped green chiles
1-1/4 teaspoons salt
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon pepper
2 cups shredded reduced-fat Mexican cheese blend
Thinly sliced green onions, optional

Steps:

  • Cook macaroni according to package directions. Meanwhile, in a large nonstick skillet, cook the beef, onion and garlic over medium heat until meat is no longer pink, breaking meat into crumbles; drain. Stir in the tomatoes, beans, tomato paste, chiles and seasonings. Drain macaroni; add to beef mixture., Transfer to a 13x9-in. baking dish coated with cooking spray. Cover and bake at 375° until bubbly, 25-30 minutes. Uncover; sprinkle with cheese. Bake until cheese is melted, 5-8 minutes longer. If desired, top with sliced green onions.

1 cup elbow macaroni, uncooked
1 1/2 lbs lean ground beef
1 medium onion, chopped
2 large garlic cloves, minced
1 (28 ounce) can diced tomatoes, undrained
1 (16 ounce) can kidney beans, rinsed, drained
1 (6 ounce) can tomato paste
1 (4 ounce) can green chilies, chopped
1 teaspoon salt
3/4 teaspoon chili powder
1/4 teaspoon ground cumin
1/2 teaspoon pepper
2 cups reduced-fat Mexican cheese blend, shredded

Steps:

  • Cook macaroni according to package directions.
  • Meanwhile, in a large nonstick skillet, cook beef, onion & garlic over medium heat until meat is no longer pink, then drain.
  • Preheat oven to 375 degrees F & coat a 13"x9" baking dish with nonstick cooking spray.
  • Add tomatoes, beans, tomato paste, chilies & seasonings to beef mixture & stir to combine.
  • Drain macaroni, then add it to the beef mixture, stirring to combine.
  • Pour beef & macaroni mixture into the prepared baking dish, then cover & bake for 25-30 minutes or until bubbly.
  • Uncover & sprinkle with the shredded cheese, then return to oven & bake another 5-8 minutes longer or until cheese is melted.

This is my version of chili Mac. I haven't made this dish in a long long time. I had all of the ingredients in my home to make this. I thought I would make it, and share with you all. I hope you all enjoy it.

Number Of Ingredients 19

1 - 1 1/2 lb of cooked hamburger
1 large sweet onion or other
1 red bell pepper
1 green bell pepper
28 oz can of chopped tomatoes
7 oz mild salsa like chi chi's or tostito's
1 c uncooked macaroni
1 15 ounce can of black beans rinsed and drained
1 can(s) 11 ounce can crisp sweet corn such as green giant or dellmonte
4 oz can of green chilies
2 tsp chili powder
1 tsp dried cilantro leaves optional
1 tsp parsley
1- 1 1/2 tsp garlic salt ( salt according to your taste )
1/2 tsp cayenne pepper
1/2 tsp ground cumin
1/2 tsp ground black pepper
2 Tbsp corn starch
8-16 oz shredded mexican cheese

Steps:

  • 1. Fry the hamburger drain and pour into large stock pot. In the same fry pan add 1 to 2 tablespoons of oil of your choice. Fry the peppers and onions together. Add the peppers and onions to pot.
  • 2. Add the rest of the ingredients except for the cornstarch, macaroni and cheese.
  • 3. Bring ingredients to a boil on stove while stirring well. Remove from heat. Mix in Uncooked macaroni. sprinkle with cornstarch and stir to combine well.
  • 4. Pour into a 2 1/2 quarts or larger casserole dish. you may also use a 9 x 13" baking pan and cover with foil. Bake about 20-30 minutes, or until macaroni is tender. Bake at 350° covered. Uncover casserole. Sprinkle with Mexican cheese. Bake casserole in oven until cheese melts. Remove from oven and serve. This taste even better the second day after it sits. If you wish you can bake this ahead of time and reheat. If you are planning on reheating this. Do not top with cheese until you reheated and let cheese melt.

4 -5 cups chili (home-made or canned)
8 ounces elbow macaroni
1/2 cup ketchup
8 ounces monterey jack pepper cheese, shredded
8 ounces cheddar cheese, shredded
jalapeno pepper, sliced (optional)

Steps:

  • Preheat oven to 350 degrees.
  • In medium saucepan, simmer chili until heated through.
  • Cook macaroni according to package directions; drain well and set aside.
  • Grease a deep 8-quart or similar casserole dish.
  • Spoon 1 cup of chili evenly on bottom of dish. Next, layer half of the macaroni, drizzle half of the ketchup (approx. 1/4 cup), half of the remaining chili and half of the cheeses. Repeat layering with remaining macaroni, 1/4 cup ketchup, remainder of chili and remaining cheeses. Top with jalapeno slices, if desired.
  • Cover and bake 30 minutes. Remove cover and bake an additional 10 minutes or until heated through and cheese is bubbly.
  • *NOTE: I prefer my home-made chili in this recipe, but if I use canned chili, I like to add chopped green pepper, chopped onion, 4 oz. can green chilies, cayenne pepper or whatever I have on hand to "doctor" it up.

CHILI MAC N BEEF CASSEROLE USE 9 X13 BAKING DISH
1 1/2 C elbo macaroni cook according tp pkg directions, drain.
2 lbs lean ground beef ( salt & pepper season to taste) while browning
1/2 med onion, diced
2 cloves fresh garlic, or tsp garlic pdr
1 can (15 oz) hormel chili with beans
1 can (15oz) hormel chili without beans
1 sm can green chilies chopped (add juice)
1 tsp cumin (i added 2 tsp)
1-1/2 tsp salt
pepper to taste
1 pkg lawreys or mccormicks taco seasoning
2 C shredded mexican cheese blend
TOPPINGS
blk olives, sour cream & green onions , tortilla chips or fritos(optional) toppings

Steps:

  • 1. PREHEAT OVEN 375. Pam spray your 9X13 dish set aside. Cook Macaroni according to Pkg Directions. DRAIN.
  • 2. As Macaroni is cooking; in a large Skillet or SAUCE PAN, Brown the beef, onion, garlic, over Med Heat. DRAIN off any Fat.
  • 3. Stir in the Chili, both Cans, Rinse cans with 1 TBS water ea, add to pan.
  • 4. add seasonings, toss well. continue heating till hot and bubbly ADD Drained Macaroni, to the Beef mixture. Toss well.
  • 5. Transfer to a (PAM)cooking sprayed 9 X 13 Baking dish COVER, & Bake @ 350 for 20-25 min or till bubbly.
  • 6. Uncover; Sprinkle with Cheese, Bake another 8-10 min longer, only until cheese is fully melted. Remove from Oven Serve with a Dollop of Sour Cream Black Olives and green Onions sprinkled on top. Hint: for a full meal deal, add a green salad & Fritos . . . Enjoy
