CHILI DOGS

Chili Dogs image

Provided by Ree Drummond : Food Network

Categories     main-dish

Time 15m

Yield 2 servings

Number Of Ingredients 17

2 good-quality beef franks
2 good-quality hot dog buns
2 cups chili, recipe follows, heated
1/2 cup grated Cheddar
2 tablespoons finely diced onion
4 pounds ground beef
6 cloves garlic, minced
Two 8-ounce cans tomato sauce
One 6-ounce can tomato paste
1/4 cup chili powder, or more as desired
2 teaspoons ground cumin
2 teaspoons dried oregano
2 teaspoons kosher salt
1/2 teaspoon cayenne pepper, or more as desired
Two 15-ounce cans kidney beans, drained and rinsed
Two 15-ounce cans pinto beans, drained and rinsed
1/2 cup masa harina (corn flour) or regular cornmeal

Steps:

  • Preheat the broiler.
  • Brown the franks in a small skillet over medium heat. Lightly toast the buns under the broiler. Put the franks on the buns and spoon on a bunch of chili. Add the cheese all over the top, then heat in the microwave to melt the cheese, 25 to 35 seconds. (Or if you're using an ovensafe plate, place it under a low broiler until the cheese melts, about 1 minute.) Sprinkle with the onion and dive in.
  • In a large, heavy pot, brown the ground beef with the garlic over medium heat until the beef is totally cooked, 8 to 10 minutes. Drain off most of the excess fat, leaving a little behind for moisture and flavor. Add the tomato sauce, tomato paste, chili powder, cumin, oregano, salt and cayenne. Stir together well, cover the pot and reduce the heat to low. Simmer for 1 hour, stirring occasionally; if the liquid level seems low, add up to 1 cup water to keep it from burning.
  • After an hour, stir in the kidney and pinto beans. In a small bowl, combine the masa harina with 1/2 cup water and stir together with a fork until it's smooth. Pour the masa mixture into the chili. Stir together well, then taste the chili and adjust the seasonings. Simmer the chili for another 10 minutes to thicken, then turn off the heat and let it cool.
  • Fill freezer bags with 2-cup portions and freeze them flat for easy stacking (or freeze in other freezer-safe containers).

CHEESY SLOW COOKER CHILI DOGS

I have taken this to potlucks in the past and people really love it! My family loves it too. Not the stuff of 5-star restaurants, but for my family this is comfort food! Take care with the type of hot dogs you buy because some of the really inexpensive ones have so much water in them it will make the sauce very thin.

CAROLINA CHILI DOGS (OAMC)

Carolina Chili Dogs (Oamc) image

Another fabulous recipe found on iVillage.com and placed here for safe keeping. I LOVE a good Chili Dog and this Hot Dog Chili is perfect. The chili can be made ahead of time (instructions for OAMC below as well).

Provided by januarybride

Categories     Meat

Time 40m

Yield 8 hot dogs, 8 serving(s)

Number Of Ingredients 11

8 hot dogs
8 hot dog buns
1 1/4 lbs extra lean ground beef
1 cup chopped onion
1 (6 ounce) can tomato paste
1/2 cup ketchup
1 tablespoon chili powder
2 teaspoons Worcestershire sauce
1 teaspoon cider vinegar or 1 teaspoon distilled white vinegar
1 teaspoon salt
1/4 teaspoon black pepper (optional)

Steps:

  • Begin making the Carolina Chili. (To avoid greasy chili, be sure to choose a very lean ground beef since the beef is not browned and drained in this recipe). Place the beef and 2 cups of water in a 4 1/2-quart Dutch oven or soup pot over high heat. Bring the water to a boil.
  • Add the chopped onion to the beef. When the water boils again, reduce the heat to medium. Stir to begin breaking up the meat.
  • Add the tomato paste, ketchup, chili powder, Worcestershire sauce, vinegar, salt, and pepper, if using. Stir well until the tomato paste has dissolved and the meat is mostly broken up.
  • Continue to cook the chili at a slow boil, stirring about every 5 minutes or so, until the mixture is thick, about 15 minutes. As the mixture thickens, you may need to reduce the heat to medium-low or low to prevent sticking.
  • Many Southerners prefer chili that is finely ground (roughly the consistency of cooked oatmeal) because it's easier to spread on a hot dog and easier to eat as well. To try it this way, place the chili (cooled at least 20 minutes) in a blender or food processor and blend on high until finely ground, 30 to 45 seconds.
  • While the chili simmers and about 12 to 15 minutes before you plan to serve the chili dogs, turn on a gas grill to medium-high.
  • Place the hot dogs on the hot grill and cook until heated through and just beginning to brown all over, about 5 minutes. Heat the buns on the grill, if desired. To serve, place each hot dog in a bun and smother with chili.
  • Make-ahead: The chili can be refrigerated, covered, for up to 2 days or it can be frozen for up to 2 months. * If the chili has been frozen, thaw it in a microwave oven on the defrost setting, following the manufacturer's directions and stirring after each 1-minute interval, then reheat. * To reheat, place the chili in a microwave-safe container, cover with a paper towel, and microwave on high until heated through, 2 to 3 minutes for 1 cup, stopping once halfway through.

HOT DOG CHILI FOR CHILI DOGS

Hot Dog Chili for Chili Dogs image

There is a vast difference between the chili you cook and serve on its own and the chili that you slap on a chili dog. The texture and taste have to compliment the dog using smaller amounts so it won't explode all over your face. This chili is our perfect double-dog-dare-you chili for use on hot dogs. Yes, they are hot dogs, not franks. Franks lived in France from the third to the fifth century on the banks of the Rhine River. If you must call them something other than hot dogs, try 'weinahs,' that works for us in the north.

CINCINNATI CHILI DOGS

Cincinnati Chili Dogs image

My in-laws are from Ohio, so we have Cincinnati chili at many of our family gatherings. I spiced up this family classic with cinnamon and cocoa powder and then ladled it over hot dogs. It's perfect for game day, tailgates and potlucks. -Jennifer Gilbert, Brighton, Michigan

Tips:

  • Choose the right chili: Use a chili that is flavorful and has a bit of a kick. You can use a store-bought chili or make your own. If you are making your own chili, be sure to use fresh ingredients and cook it low and slow for the best flavor.
  • Use good quality hot dogs: The hot dogs are the star of the show, so don't skimp on quality. Look for hot dogs that are made with 100% beef and have a good snap to them.
  • Grill or pan-fry the hot dogs: Grilling or pan-frying the hot dogs gives them a nice smoky flavor and a crispy texture. If you are grilling the hot dogs, be sure to preheat the grill to medium-high heat. If you are pan-frying the hot dogs, heat a large skillet over medium heat and add a little bit of oil.
  • Load up the chili dogs: Once the hot dogs are cooked, it's time to load them up with chili, cheese, and your favorite toppings. Be generous with the chili and cheese, and don't be afraid to experiment with different toppings. Some popular toppings include onions, mustard, ketchup, relish, and jalapeños.
  • Serve the chili dogs immediately: Chili dogs are best served hot and fresh. So, once you've loaded them up with chili, cheese, and toppings, serve them immediately and enjoy!

Conclusion:

Chili dogs are a classic American comfort food that is perfect for any occasion. They are easy to make and can be customized to your liking. So, next time you're looking for a quick and easy meal, give chili dogs a try. You won't be disappointed!
