PAN-FRIED CUMIN-CHILE CRUSTED FISH
This only serves 2 but can easily be increased to serve how many servings you need. Although the original recipe suggests using snapper, other white fish such as Tilapia or Grouper can be used. When I made this I used Tilapia, as it is more readily available where I live. As there is not much oil used to cook the fish, it best to use a bit of Pam in the skillet or a non-stick pan, as the fish tends to stick. Recipe source: local newspaper

Steps:
- Season the fish with salt and pepper. Arrange 3 shallow dishes. Put the flour in 1 dish and add the eggs to the second dish. Combine the bread crumbs in the third dish and season with 1 tablespoon of lime zest, 2 tablespoons of chili powder, the garlic powder, onion powder and thyme. Coat the fish in the flour, then the egg and then the bread crumbs.
- Heat the oil, about 1/4 cup, in large skillet over medium to medium-high heat. If your pan is not large enough to fry 4 fillets, in a single layer, heat the oven to 275 degrees F and put a cooling rack on a baking sheet. As you fry the fish, transfer them to the rack in the oven to keep warm. Fry the fish until deeply golden and crispy and transfer to a serving platter. Season with a little extra salt, top with lots of lime juice and serve.

Tips:
- Choose the right fish: Firm-fleshed fish like cod, tilapia, or catfish work best for this recipe. They can withstand the frying process without falling apart.
- Marinate the fish: Marinating the fish in a mixture of chili powder, cumin, and other spices helps infuse flavor into the fish and makes it more tender.
- Use a light touch when coating the fish in flour: Too much flour will make the fish heavy and greasy. Just a light coating is all you need.
- Fry the fish in hot oil: The oil should be hot enough to sizzle when the fish is added. This will help create a crispy crust on the outside of the fish while keeping the inside moist.
- Don't overcrowd the pan: Frying too many pieces of fish at once will lower the temperature of the oil and make the fish soggy. Fry the fish in batches if necessary.
- Serve immediately: Chili cumin fried fish is best served hot out of the fryer. Garnish with fresh cilantro or lime wedges for an extra burst of flavor.
Conclusion:
Chili cumin fried fish is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of chili powder, cumin, and other spices gives the fish a unique and flavorful crust, while the inside remains moist and tender. Serve with your favorite sides, such as rice, beans, or vegetables, for a complete meal that the whole family will enjoy.
