1 can (14-1/2 ounces) no-salt-added diced tomatoes
1 can (10 ounces) diced tomatoes and green chilies
1 small onion, chopped
1 teaspoon olive oil
2 garlic cloves, minced
1 package (8 ounces) fat-free cream cheese, cubed
6 ounces reduced-fat process cheese (Velveeta), cubed
1 teaspoon chili powder
2 tablespoons minced fresh cilantro
Baked tortilla chip scoops

Steps:

  • Pour both cans of tomatoes into a colander over a small bowl; drain, reserving 1/3 cup liquid. Discard remaining liquid or save for another use. , In a large skillet, saute onion in oil until tender. Add garlic; cook 1 minute longer. Stir in cream cheese until melted. Add the tomatoes, process cheese, chili powder and reserved liquid. Cook and stir over low heat until cheese is melted. Stir in cilantro., Keep warm; serve with tortilla chips.

First saw this recipe on facbook and read the comments and thought I can make these better. I made two versions, spicy sausage, and bacon. They were both wonderful. The boys loved the bacon ones. My youngest said wow mom, Awesome! Hope you try them and like them as much as we did. Thanks Monica

4 egg
1/2 c picante sauce
1/4 c flour
1 Tbsp chili powder
1 1/2 c cheddar cheese
1 green onion (greens only) chopped
1 spicy sausage removed from casing and browned
2 slices bacon cooked and crumbled
salt and pepper

Steps:

  • 1. preheat oven to 400 degrees. Grease 24 mini muffin tins
  • 2. Mix egg, picante sauce, flour,chili powder, cheese, onion, salt and pepper and either the crumbled sausage or the bacon. I actually added them in the tin and made 12 sausage and 12 bacon.
  • 3. Fill the tins 1/2 way up. top with more cheese and place in the oven about 10 minutes.
  • 4. remove from pan and serve hot or at room temperature, would be good with bloody mary ketchup (recipe on my JAP page.

Continuing my quest to use what I already have instead of going to the store, I found this recipe in Better Homes and Gardens 1993 Best Recipes Yearbook. Abigail Kurtz Mahoney won $200 for her recipe. This is super simple and quick. I used 7 ounces instead of 4 ounces of green chilies, and I probably threw in about 1 cup of cilantro into the soup because I love the flavor. I also had 2 cups of onions but no zucchinis (rats). I tossed in 8 ounces of sour cream instead of serving it with individual bowls, and I skipped the cheese completely (not that I'm lacking in dairy here). The beans were very meaty, and next time I'll throw in some cayenne pepper or some hot peppers for more heat. I like how chunky everything is...a perfect recipe for a cold winter day.

28 ounces crushed tomatoes
30 ounces pinto beans
15 ounces red kidney beans
15 ounces garbanzo beans
14 1/2 ounces hominy
6 ounces tomato paste
4 ounces diced green chili peppers
2 medium onions, chopped (1 cup)
2 medium zucchini, halved lengthwise and sliced (2 1/2 cups)
1 -2 tablespoon chili powder
1 teaspoon ground cumin
3/4 teaspoon garlic powder
1/2 teaspoon sugar
1 1/2 cups shredded monterey jack cheese
cilantro
salt

Steps:

  • In a Dutch oven combine tomatoes, undrained pinto and kidney beans, drained garbanzo beans and hominy, tomato paste, undrained chili peppers, onions, zucchini, chili powder, cumin, garlic powder, sugar, and salt to taste.
  • Heat to boiling and reduce heat.
  • Simmer, covered for 30 minutes and remove from heat.
  • Add cheese and stir until melted.
  • Serve with sour cream and garnish with cilantro.
