2 cups biscuit baking mix
⅔ cup water
3 cups chili with beans
½ pound hot dogs, sliced
2 cups shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). In a medium bowl, mix together the baking mix and water to form a smooth dough. Set aside.
  • Spread half of the chili into the bottom of a 1 1/2 quart casserole dish. Make a layer of the hot dogs over the chili. Cover the hot dog layer with cheese, then top with the rest of the chili. On a lightly floured surface, roll out the biscuit dough to 1/4 inch thickness. Lay the dough over the contents of the dish, and poke a few slits to vent steam.
  • Bake for 15 to 25 minutes in the preheated oven, or until the top crust is golden.

1 lb ground beef or turkey
1/2 c chopped onion
1 envelope chili seasoning, divided
1 can(s) (14.5oz.) diced or crushed tomatoes
1 can(s) (15oz.)chili beans(hot or mild)
1 c frozen corn
1 1/3 c water
1/2 tsp salt
2 Tbsp butter
1/2 c milk
1 1/3 c mashed potato flakes*
1 c shredded cheddar or colby cheese, divided

Steps:

  • 1. Brown ground beef or turkey with the onion over medium-high heat until no longer pink. Add all but 1 teaspoon of the chili seasoning and mix well. Set remaining seasoning mix aside. Stir in the tomatoes, beans and corn. Cook and stir for 2 minutes, until heated through. Reduce heat to low and simmer while making potatoes. For potatoes: Bring water, salt and butter to a boil in a medium saucepan. Remove from heat and stir in milk and potato flakes. Stir in 1/2 cup of the shredded cheese. Place chili mixture into greased 2 quart casserole. Carefully spread mashed potatoes on top of chili. Top with remaining 1/2 cup cheese and reserved chili seasoning. Bake in 350 degree oven for 30 minutes.
  • 2. *This is the 4 serving size amount of potatoes, which is how I wrote the recipe for the contest. I actually prefer it with more potatoes(the 6 serving amount). Just adjust the other potato ingredients according to the instructions on the box of potato flakes. Also, instant potatoes is something I rarely actually have on hand, so when I make this for us, I usually use real mashed potatoes.

1 (8 1/2 ounce) box Jiffy cornbread mix
1 egg
3 teaspoons sugar
1/2 cup milk
1 (15 ounce) can prepared chili (any brand is fine. I use the WalMart brand)
2 cups shredded extra-sharp cheddar cheese
1/2 cup mild salsa
1 large onion, minced
1 green bell pepper, diced small
1 can chickpeas, drained
2 slices butter (3 if you have to use two casserole dishes)

Steps:

  • Mix egg, sugar, milk and cornbread mix.
  • The box may call for less milk but a half cup makes the batter loose enough for this recipe.
  • Butter your casserole dish and pour in batter. Set it aside.
  • Mix onion, bell peppers, chickpeas, salsa, chili and half the cheese and spoon on top of the corn bread batter.
  • Top with the rest of the cheese.
  • Bake at 350 degrees for 30 minutes or until the cheese is browning and bubbling.

This was one of my Mom's favorite recipes for pot lucks. It is always a hit. It can be really easy if you use bagged shredded cheese and frozen pie crust. The recipe can also be doubled--use a rimmed cookie sheet lined with pastry dough--just double the ingredients and follow the directions.

1 1/2 c monterey jack cheese, shredded
1 c cheddar cheese, shredded
or use 2 1/2 cups of taco/mexican/colby jack cheese
1 small can(s) green chilies, chopped
1 c half and half (mom also used evaporated milk)
3 eggs, slightly beaten
1/4 tsp salt
1 deep dish pie shell, use frozen or the following recipe
PIE CRUST
1 1/4 c all purpose flour
6 Tbsp butter
1 egg
1/4 tsp salt

Steps:

  • 1. Mix butter and flour with a fork till blended. Add egg and salt and work until it holds together. Roll out on floured board. Fit into pie tin, fluting the edges.
  • 2. Bake the pie shell in a 400 degree oven 12 minutes till lightly browned.
  • 3. Sprinkle all Jack and 1/2 the cheddar cheese over the crust (if using one of the other cheeses, place 2 cups of the cheese in the crust). Distribute the chilis over the cheese. I also like to use 4oz soy chorizo and diced onions that have been sauted together and cooled before adding to the pie.
  • 4. Beat the half and half (or milk) with the eggs and salt. Pour over the pie and sprinkle with the remaining cheese
  • 5. Bake for 40 minutes at 325 degrees. Remove from oven when a knife inserted in center comes out clean and the pie is solid. Let stand for 15 minutes before cutting.

Tips:

  • Use a good quality cheese that melts well, such as cheddar, Monterey Jack, or Pepper Jack.
