- In a small pan heat chili, and keep warm.
- Make sure all your ingredients are ready before you begin.
- Season 3-4 beaten eggs with salt and pepper.
- Melt a small amount of butter or margarine in a small nonstick skillet.
- Add in a little onion and jalapeno and saute for a few minutes (this can be skipped if you desire).
- Add eggs all at once and swirl around pan, scraping and tilting edges to cook evenly.
- When just slightly moist on top, place about 1/2 cup warm chili along half of the eggs and top with some shredded cheese, and additional onions and jalapenos, if desired.
- Gently fold omelet over to form semicircle.
- Slide onto serving plate and top with a spoon of chili and more cheese for presentation.
- Repeat with ingredients and 3-4 eggs per omelette.

- In a large skillet, saute the tomato, onion, beans, garlic, celery salt, chili powder and Worcestershire sauce in 1 teaspoon oil until liquid has evaporated; set aside and keep warm. , In an 8-in. skillet, heat remaining oil over medium-high heat. - Make one omelet at a time. Break two eggs into each of two small bowls. Add salt and pepper and beat until thoroughly blended.
- Heat a small, well-cured omelet pan or use a nonstick pan.
- Add two teaspoons of butter to the pan. When it is sizzling, add two of the beaten eggs.
- Cook over high heat, shaking the pan and stirring rapidly with a fork held parallel to the bottom of the pan. When the eggs start to set, tilt the omelet pan and tap it against the stove burner. This should make the omelet slide about one inch away from the hand, ''curving'' the omelet.
- Spoon one or two tablespoons of the hot chili sauce and two tablespoons of the cheese in the center of the omelet.
- Quickly, with a fork, carefully and neatly fold the omelet into thirds to enclose the filling and give the omelet a neat, oval shape with pointed ends. Slide the omelet, seam side down, onto a heated plate. Serve immediately.
- Use the remaining ingredients to make another omelet.

- 1. Wisk eggs, milk, and salt and pepper in a small bowl. Microwave left over chili for 30 seconds. On medium heat spray a small skillet with non stick cooking spray.

- 1. Saute the jalapeno, bell pepper and onion for the chili in a 4 (or more) quart pot.
- 2. Add the rest of the chili ingredients to the pot and simmer on med-low heat for 20 mins.
- 3. while the chili ism simmering, saute the onion fr the omelet in a omelet pan.Set to the side. Whip the 3 eggs until well blended (add salt to the egg).
- 4. Add oil to your pan (I use olive oil & butter mix), add eggs. When omelet is 1/2 cooked add half of the cheddar cheese. Fold the omelet, flip and finish cooking it. plate the omelet.
- 5. Top the omelet with chili, the rest of the cheese, green onion and tomato.
Tips:
- For a fluffier omelet, separate the eggs and beat the whites until stiff peaks form before folding them into the yolk mixture.
- To prevent the omelet from sticking to the pan, use a non-stick skillet and make sure it is heated over medium heat before adding the egg mixture.
- If you don't have chili, you can substitute your favorite taco seasoning or enchilada sauce.
