THE GREATEST QUESADILLA

Categories     main-dish

Time 30m

Yield 3 servings

Number Of Ingredients 10

1 cup grated white Cheddar cheese
1 cup grated Monterey Jack cheese
1 cup grated pepper jack cheese
6 tablespoons salted butter
Six 8-inch flour tortillas
Pinch of kosher salt
Pinch of freshly ground black pepper
2 Roma tomatoes, diced
One 4-ounce can diced green chiles, drained
9 fresh cilantro sprigs, for garnish

Steps:

  • Toss together the Cheddar, Monterey Jack and pepper jack in a bowl; set aside.
  • Heat 2 tablespoons of the butter in large skillet over medium heat. Place a single tortilla in the skillet. Sprinkle a little less than a third of the cheese blend over the tortilla. Sprinkle with salt and pepper. Add about a third of the diced tomato and a third of the chiles. Sprinkle a touch more cheese over the whole thing and gently top and press with a second tortilla. Cook until golden on the bottom, about 3 minutes.
  • Carefully flip the quesadilla to the other side. Continue cooking until the second side is golden, 3 to 4 minutes more. Repeat with the remaining ingredients. Slice each quesadilla into wedges and garnish with cilantro sprigs.

Tips:

  • Choose the right beef: For the best flavor and texture, use a high-quality ground beef, such as chuck or sirloin.
  • Don't overcook the beef: Overcooked beef will be tough and dry. Cook it just until it is browned and cooked through.
  • Use a flavorful chili seasoning: The chili seasoning is what gives the quesadillas their flavor, so be sure to use a good one. You can use a store-bought chili seasoning or make your own.
  • Use a variety of cheeses: Using a variety of cheeses will give the quesadillas a more complex flavor and texture. Try using a combination of cheddar, mozzarella, and Monterey Jack cheeses.
  • Don't overcrowd the quesadillas: If you overcrowd the quesadillas, they will be difficult to fold and cook evenly. Fill them with just enough ingredients so that they can be folded in half without overflowing.
  • Cook the quesadillas over medium heat: Cooking the quesadillas over medium heat will help to prevent them from burning. Cook them for 2-3 minutes per side, or until they are golden brown and the cheese is melted.

Conclusion:

Chili beef quesadillas are a delicious and easy-to-make meal that is perfect for a quick lunch or dinner. They are also a great way to use up leftover chili. With a few simple ingredients and a little bit of time, you can make a delicious and satisfying meal that the whole family will love.
