In the vibrant culinary landscape of Chile, Pebre stands as a cornerstone of flavor, a zesty condiment that elevates any dish with its tangy, herbaceous charm. This vibrant relish, crafted from a symphony of fresh ingredients, is a staple in Chilean cuisine, gracing tables across the nation and captivating palates with its versatility. Pebre's journey begins with the selection of ripe tomatoes, their plump flesh bursting with natural sweetness. These tomatoes are then joined by crisp and refreshing onions, their pungency adding a layer of depth to the relish. Cilantro, with its vibrant green hue and distinctive aroma, lends a herbaceous touch, while garlic's sharp bite adds a savory dimension. The harmonious blend of these ingredients is further enhanced by the addition of spicy peppers, their heat providing a fiery kick that awakens the senses. Lime juice, with its tangy acidity, brightens the relish, balancing its flavors and creating a symphony of taste. Pebre's versatility knows no bounds, as it seamlessly complements a myriad of dishes. It can be slathered atop grilled meats, adding a burst of flavor to every bite. It serves as a vibrant accompaniment to empanadas, its tangy zest cutting through the richness of the filling. Pebre breathes life into salads, transforming them into vibrant and flavorful creations. Its piquant charm even extends to sandwiches, where it adds a layer of complexity and delight. Be it a traditional Chilean feast or a casual gathering, Pebre emerges as an indispensable culinary companion, adding a touch of Chilean sunshine to every meal.

Pebre is a Chilean salsa and is most commonly used on bread. It is also used on meats or anything else you desire. My favorite way to use it is on barbecued tri-tip. You can vary the ingredients to suit your taste.

Chilean Cilantro Salsa (Pebre) image

There are many variations of pebres, mildly hot or very hot, according to taste. This one is adapted from "The South American Table," by Maria Baez Kijac. You can add one finely chopped tomato to the salsa, if you like. Serve in a small bowl with grilled meat, chicken or seafood.

Time 10m

Yield 1 cup

Number Of Ingredients 9

2 medium onions
1 bunch cilantro
3 tablespoons red pepper paste
2 cloves garlic
olive oil
salt
1 tablespoon lime juice
1 tablespoon vinegar
2 tablespoons water

Steps:

  • Cube the onion in small cubes Then add, sugar or salt or hot water and rinse, this is to neutralize the flavor of the onion (a trick often done in Caribean cooking i've found).
  • Chop the cilantro and mix with the onion.
  • Add: hot pepper paste, minced garlic, olive oil, vinegar, lime, water and salt to taste.
  • Mix well and let stand.
  • Serve on bread (Chacarero's sandwhich i posted) or on top of grilled meats.

Tips:

  • Use fresh, ripe ingredients. This will ensure the best flavor for your pebre.
  • Chop the ingredients finely. This will help them to distribute evenly throughout the sauce.
  • Use a variety of colors of bell peppers. This will give your pebre a more vibrant appearance.
  • Adjust the amount of chili peppers to your taste. If you like a spicy pebre, use more chili peppers. If you prefer a milder sauce, use fewer.
  • Let the pebre sit for at least 30 minutes before serving. This will allow the flavors to meld together.

Conclusion:

Pebre is a versatile sauce that can be used as a condiment, marinade, or even a dipping sauce. It is a delicious and easy way to add flavor to your favorite dishes. Whether you are making a traditional Chilean meal or simply looking for a new way to spice up your cooking, pebre is a great option. So next time you are looking for a flavorful and easy-to-make sauce, give pebre a try!
