HOMEMADE BANANA KETCHUP

Homemade Banana Ketchup image

Banana ketchup sounds different, but it's a great condiment with pork or chicken. There is a little tomato in it, but the banana flavor dominates.

Provided by Peggy Trowbridge Filippone

Categories     Lunch     Dinner     Snack     Condiment

Time 2h

Number Of Ingredients 16

4 large bananas (very ripe, peeled, and sliced)
2 large garlic cloves (quartered)
1 1/3 cups cider vinegar (divided)
1/2 cup golden raisins
1/3 cup sweet onions (chopped)
1/3 cup tomato paste
3 to 4 cups water
1/2 cup dark brown sugar (packed)
1 1/2 teaspoons salt
1/2 teaspoon chipotle chile pepper (or to taste)
1/4 cup light corn syrup
2 teaspoons ground allspice
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
2 tablespoons dark rum

Steps:

  • Gather the ingredients.
  • Place the bananas, garlic, 2/3 cup of the vinegar, raisins, onions, and tomato paste in the bowl of a food processor fitted with a metal blade.
  • Process until it is smooth and pour it into a large, heavy saucepan.
  • To the banana mixture in the saucepan, add the remaining 2/3 cup vinegar, 3 cups of water, brown sugar, salt , and ground chipotle chile pepper. Stir to combine.
  • Bring the mixture to a boil over medium-high heat, stirring often. Reduce the heat to low and cook uncovered, stirring the ketchup occasionally, for 1 hour and 15 minutes.
  • If the ketchup gets too thick and begins to stick to the pot, add some of the remaining water (up to 1 cup).
  • Add the corn syrup, allspice, cinnamon, nutmeg, and cloves. Cook over medium-low heat, stirring often, for another 15 minutes or until it is thick enough to coat a metal spoon.
  • Stir in the rum and remove the pan from heat. Let it cool for 10 minutes.
  • Push the ketchup through a fine strainer, mashing the solids with the back of a spoon.
  • Let it cool to room temperature.
  • Pour the banana ketchup into glass bottles or jars, cover, and refrigerate.

MANGO WITH CHILE-LIME SALT

Mango With Chile-Lime Salt image

This take on the classic street food, served throughout Mexico, is encountered often in open air markets, beaches and parks in summer. The original is often made with tajín spice, a store-bought blend of ground chile, lime and salt. This preparation allows you to use any variety of mango, in states of ripeness from soft and juicy to firm, and the homemade chile-lime salt can be used for a variety of savory or sweet dishes as a garnish or topping. If using store-bought chile-lime salt, substitute the ground chile, lime zest and salt with 2 tablespoons of the seasoning.

Categories     snack, finger foods

Time 10m

Yield 2 servings

Number Of Ingredients 4

1 tablespoon ground chile, such as ancho or paprika
1 tablespoon fresh lime zest
1/2 teaspoon fine sea salt
2 ripe mangoes (1 1/2 pounds), peeled, pitted and cut into 1/2-inch slices

Steps:

  • In a small bowl, combine the chile powder, lime zest and salt. Use the chile-lime salt immediately or store at room temperature in an airtight container for up to 3 days.
  • Sprinkle the chile-lime salt all over the mango and serve immediately, or loosely cover and refrigerate for up to 4 hours.

Tips:

  • Choose ripe bananas and mangoes: Using ripe fruits will ensure a sweeter and more flavorful ketchup.
  • Use a variety of chili peppers: This will give your ketchup a more complex flavor. If you like it hot, use hotter peppers. If you prefer a milder ketchup, use milder peppers.
  • Roast the chili peppers before using them: Roasting the peppers will bring out their flavor and make them easier to blend.
  • Use fresh ginger and garlic: Fresh ginger and garlic will give your ketchup a more vibrant flavor.
  • Don't overcook the ketchup: Overcooking the ketchup will make it thick and syrupy. Cook it just until it has thickened slightly and reached your desired consistency.

Conclusion:

This chile banana mango ketchup is a delicious and versatile condiment that can be used on a variety of dishes. It's perfect for adding a sweet and spicy flavor to burgers, hot dogs, chicken, fish, and even vegetables. It's also a great way to use up ripe bananas and mangoes. So next time you have some extra fruit on hand, give this recipe a try. You won't be disappointed!
