THE "BETTER THAN TUNA" VEGAN CHICKPEA SALAD SANDWICH

The

You wouldn't think tuna salad would be something a person would miss after going vegetarian/vegan, but every now and then, I crave it, and I want something simple - no cooking required! This recipe is perfect for a picnic; quick lunch; or a fast, light dinner. Chickpeas resemble the texture of tuna when you pulse them in a food processor. Spread this on some toasted bread with green leaf lettuce or dip into it with crackers. The best part? It's cholesterol and mercury free and super yummy!

CHICKPEA SALAD SANDWICH

Sometimes you just want a simple, good sandwich that doesn't involve faux deli slices. I keep a tin of chickpeas on hand for just such occassions, and never make it exactly the same way twice...but this is generally a combo of ingredients and flavours I enjoy. I also like to add in a bit of flax oil, just to get my omegas in. Served on some toasted bread, this is a quick and satisfying lunch.

Tips:

  • Use high-quality chickpeas. The better the chickpeas, the better the salad will be. Look for chickpeas that are plump and have a smooth, even color. Avoid chickpeas that are wrinkled or have any blemishes.
  • Cook the chickpeas properly. If you're using dried chickpeas, be sure to soak them overnight before cooking. This will help them cook more evenly and prevent them from becoming tough.
  • Don't overcook the chickpeas. Overcooked chickpeas will be mushy and lose their flavor. Cook them until they are just tender, about 1 hour.
  • Use a variety of vegetables. The more vegetables you use, the more flavorful and nutritious the salad will be. Some good choices include celery, carrots, red onion, cucumber, and tomatoes.
  • Don't be afraid to experiment with different dressings. There are many different ways to dress a chickpea salad. Try a simple vinaigrette, a creamy dressing, or a yogurt-based dressing.
  • Serve the salad immediately or chill it for later. Chickpea salad can be served immediately after it's made, or it can be chilled for later. If you're chilling the salad, be sure to let it come to room temperature before serving.

Conclusion:

Chickpea salad is a delicious, healthy, and versatile dish that can be enjoyed for lunch, dinner, or a snack. It's a great way to use up leftover chickpeas, and it's also a perfect meal for meal prepping. With so many different ways to make it, there's sure to be a chickpea salad recipe that everyone will love.
