2 garlic cloves, chopped
1 carrot, chopped
1/2 small onion, chopped
Sea salt and freshly ground black pepper
One 8-ounce can tomato sauce or 8 ounces crushed tomatoes
2/3 cup chickpea flour
2 teaspoons garlic powder
1/2 teaspoon salt
2 teaspoons olive oil
1/2 teaspoon olive oil
1 cup grated provolone cheese
3 ounces chicken sausage (about 1 link), cut into 1/4-inch slices

Steps:

  • Preheat the oven to 425 degrees F.
  • For the tomato sauce: In a large pot, heat the oil over medium-high heat. Add the garlic, carrots and onion and saute until the vegetables are soft, approximately 5 minutes. 2/3 cup garbanzo flour
1/3 teaspoon salt
1/2 cup water
1/2 teaspoon rosemary, finely chopped
3 tablespoons extra virgin olive oil
2 tablespoons chopped tomatoes
1 tablespoon onion, finely chopped
3 tablespoons parmesan cheese, grated
1/4 teaspoon black pepper

Steps:

  • Preheat the broiler.
  • Sift the chickpea flour with the salt into a medium bowl.
  • Slowly add 1/4 cup of the water, whisking constantly to form a paste. Beat with a wooden spoon until smooth. Whisk in the remaining 1/4 cup of water and let the batter stand at room temperature for 30 minutes, then stir in the rosemary.
  • Heat 1 tablespoon of the olive oil in a 12" nonstick ovenproof skillet.

1 teaspoon baking powder

8 ounces fresh mozzarella, thinly sliced
1/2 cup grated Parmesan
3 large ripe plum tomatoes, very thinly sliced
Kosher salt and freshly ground black pepper
1/2 cup fresh basil leaves

Steps:
