150g tub low fat natural yogurt
a good handful of fresh coriander , roughly chopped
2x cans chickpea , drained and rinsed
400g can tuna in brine, drained
1 small onion , finely chopped
1 plump garlic clove , crushed
2 tbsp lemon juice
1 tsp cumin seeds

2 tbsp plain flour
4 tsp vegetable oil
12 cherry tomatoes , halved

Dust with flour.

Tips:

  • For the best flavor, use high-quality tuna. Look for tuna that is packed in olive oil or water, and avoid tuna that is packed in brine.
  • If you don't have any panko breadcrumbs, you can make your own by pulsing bread in a food processor until it resembles coarse crumbs.
  • Be careful not to overmix the tuna mixture, as this will make the cakes tough.
  • You can cook the cakes in a skillet or in the oven. If you cook them in a skillet, be sure to use a non-stick skillet and cook the cakes over medium heat so that they don't burn.
  • Serve the cakes with your favorite dipping sauce, such as tartar sauce, lemon-herb sauce, or Sriracha mayonnaise.

Conclusion:

These chickpea and tuna cakes are a delicious and healthy way to enjoy tuna. They're easy to make, and they're perfect for a quick and easy lunch or dinner. Serve them with your favorite dipping sauce, and you've got a meal that the whole family will love.
