2 pounds boneless skinless chicken thighs

Steps:

1 tablespoon grainy mustard
1 tablespoon unsalted butter
4 (4-oz.) boneless, skinless chicken thighs
1 teaspoon kosher salt, divided
1 teaspoon black pepper, divided
2 tablespoons olive oil, divided
3 cups cooked quinoa
1/4 cup unsalted roasted pistachios
1/4 cup pomegranate arils
1 tablespoon chopped fresh mint

Steps:

  • Bring pomegranate juice and sugar to a boil in a small saucepan over high, and cook, whisking occasionally, until reduced by half, about 16 minutes. 4 skinless, boneless chicken breasts
1 (6 ounce) container plain low-fat yogurt
1 lemon, juiced
1 cup dried bread crumbs, seasoned
½ teaspoon garlic powder
salt to taste
¼ cup butter
1 tablespoon chopped fresh parsley

  • Preheat oven to 350 degrees F (175 degrees C).

1/4 cup plain whole-milk yogurt (not Greek)
1/3 cup plus 2 tablespoons pomegranate molasses
4 tablespoons honey, divided

1 3 1/2-4-pounds chicken, backbone removed, halved

  • Drizzle enough oil to barely coat the bottom of a large heavy skillet, preferably cast iron, that can hold both chicken halves (or you can roast chicken on a foil-lined rimmed baking sheet). Remove chicken from marinade, letting excess drip back into bag, and place in skillet, skin side up. Pat chicken dry with paper towels; season lightly with salt. Brush or spoon pomegranate molasses mixture evenly over skin.
  • Roast chicken until skin is lacquered and deep mahogany over most of surface and juices run clear when thigh meat is pierced with a knife, 25-30 minutes. Transfer to a cutting board and let rest 15 minutes.
  • Meanwhile, melt butter in a small skillet over medium-low heat. Cook pine nuts, tossing often, until golden and mixture smells nutty (don't let the butter burn), about 3 minutes. Scrape buttery pine nuts into a small bowl and season with salt.
  • Pour pomegranate juice into a large bowl or shallow platter and squeeze in lime. Season with a large pinch of salt and stir to dissolve. Add chicken to bowl (or divide between 2 shallow bowls) and spoon buttery pine nuts over to serve.

8 bone-in chicken thighs (or breasts if you prefer )
2 tablespoons olive oil
1/2 cup pomegranate molasses
1/3 cup pomegranate juice
1/4 cup honey
1 tablespoon balsamic vinegar
1 lemon (juiced)
4 cloves garlic (finely grated )
handful pomegranate seeds
handful parsley
kosher salt (to taste)
pepper (to taste)

Steps:

  • Pre-heat oven to 400.
  • Pat chicken dry with a paper towel, season with salt and let sit while you make the marinade (up to 30 min is ideal).
  • Whisk together olive oil, pomegranate molasses, pomegranate juice, honey, balsamic, lemon and garlic. Pour marinade over chicken, either in a bowl, glass Tupperware, or resealable plastic bag. Spread the marinade around so all the chicken is evenly coated and let sit at least 30min and up to over night in the fridge.
  • To cook, place chicken skin side up in a roasting dish, then pour the marinade over the meat. The marinade should generously cover the bottom of the pan.
  • Cook until the chicken is tender at the bone and a meat or instant read thermometer reaches 165 when inserted inserted in the thickest part (about 25 minutes for breasts and 45 for thighs. If using both light and dark meat, remove the breasts while the thighs keep cooking then return the breasts to the pan in the oven once the thighs are done.
  • Crank the oven to 450 and let the sauce reduce and the skin get dark brown and crispy, about 12 min longer. Brush the chicken with the marinade from the pan every 3-4 minutes to glaze them.
  • Serve warm and garnish with pomegranate seeds and chopped parsley.
  • Cover and refrigerate leftovers for up to 3 days.
