1/4 cup plus 2 tablespoons Dijon mustard
1/4 cup rice wine vinegar
3 tablespoons clover honey
Kosher salt and freshly ground black pepper
1/3 cup canola oil
1/3 cup extra-virgin olive oil
2 tablespoons light brown sugar
2 teaspoons sweet paprika
Kosher salt and freshly ground black pepper
One 4 pound whole chicken, excess fat trimmed, rinsed and patted dry
2 tablespoons canola oil

Steps:

  • For the sauce: Whisk together the mustard, vinegar, honey, 1 1/2 teaspoons salt and 1 tablespoon pepper in a medium bowl. Combine the canola and olive oil, then slowly add to the mustard mixture and whisk until emulsified. Let sit at room temperature while you prepare the chicken. The sauce can be made 2 days in advance and stored, covered, in the refrigerator. Bring to room temperature before serving.
  • For the chicken: Set up the rotisserie according to the manufacturer's directions. Combine the sugar, paprika, 1 1/2 tablespoons salt and 1 teaspoon pepper in a small bowl. Brush the chicken with the oil and rub with the spice mixture.
  • Thread the chicken onto the rotisserie and cook until an instant-read thermometer inserted into the breast registers 165 degrees F, about 1 hour 45 minutes. Remove from the rotisserie, brush liberally with some of the sauce, loosely tent with foil and let rest 15 minutes before slicing. Serve with the sauce on the side.

3 1/2 pounds mixed chicken drumsticks and thighs
Salt and pepper
3 tablespoons unsalted butter
1 head garlic, broken into unpeeled cloves
1 cup red wine vinegar
1 pound tomatoes, roughly chopped
1 tablespoon tomato paste
4 sprigs fresh thyme
4 sprigs fresh flat-leaf parsley
1 bay leaf
1 cup chicken stock
Chopped fresh parsley leaves, as needed

Steps:

  • Season the chicken with salt and pepper. Melt 2 tablespoons of the butter in a large skillet until foaming, then, a few pieces at a time, brown the chicken well on all sides. You're not cooking the chicken here; just making the skin crisp and giving it color, so 5 minutes per side is about right. Remove the chicken to a plate.
  • Add the garlic to the pan and cook about 10 minutes. Deglaze the pan with the vinegar and boil to reduce by half, 10 to 15 minutes. Return the chicken to the pan. Add the tomatoes and tomato paste. Using a piece of kitchen twine, tie together the thyme, parsley, and bay leaf. Add the herb bundle to the chicken and simmer, uncovered, until the meat falls from the bone, about 30 minutes. Transfer the chicken to a dish, cover, and keep warm.
  • Pour the stock into the pan juices and boil until thickened, about 10 minutes. Strain into a saucepan, and if it's still not concentrated enough for you liking, boil it down a little more. Whisk in the remaining tablespoon of butter. Season, and pour over the chicken. Serve with chopped parsley, sprinkled over, and with a bowl of roasted or mashed potatoes on the side.

1 teaspoon ground turmeric
6 tablespoons olive oil
Kosher salt and black pepper
1/2 cup white wine vinegar
1 1/2 cups green Castelvetrano olives, crushed and pitted
2 garlic cloves, finely grated
1 cup parsley, tender leaves and stems, chopped

Steps:

  • Heat oven to 450 degrees. Place chicken on a rimmed baking sheet and toss with turmeric and 2 tablespoons olive oil, and season with salt and pepper. Make sure chicken is skin-side up, then pour vinegar over and around chicken and place in the oven.
  • Bake chicken, without flipping, until cooked through and deeply browned all over, 25 to 30 minutes.
  • Meanwhile, combine olives, garlic, parsley, the remaining 4 tablespoons olive oil and 2 tablespoons water in a small bowl; season with salt and pepper.
  • Once chicken is cooked, remove baking sheet from the oven and transfer chicken to a large serving platter, leaving behind any of the juices and bits stuck to the pan.
  • Make sure the baking sheet is on a sturdy surface (the stovetop, a counter), then pour the olive mixture onto the sheet. Using a spatula or wooden spoon, gently scrape up all the bits the chicken left behind, letting the olive mixture mingle with the rendered fat and get increasingly saucy. Pour olive mixture over the chicken, then serve.

1/3 cup reduced-sodium chicken broth
2 teaspoons mild honey
2 tablespoons unsalted butter

Steps:

  • Put oven rack in upper third of oven and preheat oven to 450°F.
  • Pat chicken dry and sprinkle evenly with salt and pepper. 3Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then sear skin side of chicken until golden brown, 4 to 6 minutes. Transfer chicken, skin side up, with tongs to a large shallow baking pan (reserve skillet) and roast until chicken is just cooked through, 20 to 25 minutes. Let chicken stand 5 minutes.
  • Meanwhile, cook garlic in reserved skillet over moderately high heat, stirring, until pale golden, 15 to 30 seconds. Add broth and honey and simmer, stirring occasionally, until liquid is reduced to about 1/2 cup, about 2 minutes. Remove from heat and whisk in butter, 1 tablespoon at a time, until incorporated. Season with salt and serve with chicken.

1 large whole chicken, cut into 8 serving pieces
2 teaspoons salt
1 teaspoon black pepper
1 tablespoon oil
3 tablespoons unsalted butter
4 garlic cloves, chopped
2 shallots, finely chopped
1 medium carrot, finely chopped
2 sprigs thyme
1 bay leaf
1 tablespoon tomato paste
1 cup dry red wine
1/2 cup red wine vinegar
2 tablespoons sugar
1 cup chicken stock

Steps:

  • Preheat oven to 350°F.
  • Rinse and dry chicken, then sprinkle with 1 teaspoon of salt, and 1/2 teaspoon pepper.
  • Heat oil and 1 tablespoon of butter in a large heavy skillet of medium high heat.
  • Brown the chicken on all sides (in 2 batches if necessary to keep from crowding pan). Set aside the pan when finished, do not rinse.
  • Place the browned chicken in a single layer in a small roasting pan.
  • Roast, uncovered, for 15 minutes. Chicken will not be cooked through at this point.
  • While chicken is roasting, start the sauce:.
  • Remove all but 2 tablespoons of fat from the pan used to brown the chicken.
  • Add the garlic, shallots, carrot, thyme, and bay leaf; cook over medium high heat until vegetables are browned.
  • Add the tomato paste, stir, and cook for 1 minute.
  • Add the wine, vinegar, sugar, 1 teaspoon of salt and 1/2 teaspoon of pepper.
  • Bring to a boil, stirring occasionally and cook until liquid is reduced by half.
  • Add the chicken stock and any juices from the roasting pan to the sauce and return to a boil.
  • Pour the sauce through a strainer, onto the chicken, pressing on the vegetables to get all of the liquid out. Discard the vegetables left in the strainer.
  • Return the chicken to the oven, uncovered, and roast for another 15 minutes, or until the chicken is just done.
  • Move the chicken to a serving platter, and cover to keep warm while finishing the sauce.
  • Boil the sauce remaining in the roasting pan over high heat, until reduced to about a cup.
  • Remove from the heat, then add the remaining 2 tablespoons of butter, stirring just until incorporated.
  • Taste the sauce, and add salt of pepper as needed.
  • Pour the sauce over the chicken, and serve immediately.

1 free-range chicken, cut to 8 pieces (ask your butcher to do it for you if you want)
1 bouquet garni, of thyme, bay leaf, parsley, tarragon (i.e. herbs wrapped in cheese cloth)
2 tablespoons olive oil
1 tablespoon butter
1 onion, diced
10 garlic cloves, peeled
1 cup white wine vinegar
2 cups diced tomatoes
1 cup dry white wine
1 cup chicken stock
salt and pepper
chopped parsley

Steps:

  • Make sure chicken parts are patted dry.
  • Season them.
  • Heat olive oil in large sauté pan or dutch oven.
  • Lay the chicken skin side down (cook the chicken in batches if the pan is not large enough) turn chicken to allow it to brown evenly on all sides (about 3 minutes each side.).
  • Add butter, diced onion, garlic cloves, and sauté for a few more minutes.
  • Remove any access fat.
  • Deglaze the pot with the white wine vinegar and reduce the liquid COMPLETELY.
  • Add the bouquet garni, white wine, chicken stock and diced tomatoes to the pot.
  • Bring to a boil, lower the heat to a slow simmer, cover and simmer for 30 minutes.
  • Take off the lid, raise the temperature to medium, take out the herb sachet and cook for another 10 minutes (patience, patience! this process will reduce the liquid and thicken the sauce).
  • Plate chicken with the sauce and garnish chopped parsley.

2 Turkish bay leaves or 1 California
1 tablespoon tomato paste
1 cup dry red wine
1/2 cup red-wine vinegar
2 tablespoons sugar
1 cup reduced-sodium chicken broth (8 fl oz)
Garnish: fresh thyme sprigs

Steps:

  • Cook chicken:
  • Put oven rack in middle position and preheat oven to 350°F.
  • Pat chicken dry and sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper. Heat oil and 1 tablespoon butter in a 10- to 12-inch heavy skillet over moderately high heat until foam subsides, then brown chicken in 2 batches, turning over once, 8 to 10 minutes per batch. Transfer chicken as browned to a small (13- by 9-inch) flameproof roasting pan, arranging it in 1 layer. Once all chicken is browned, roast, uncovered, in oven 15 minutes.
  • Make sauce while chicken roasts:
  • Discard all but 2 tablespoons fat from skillet, then add garlic, shallots, carrot, thyme sprigs (2), and bay leaves and cook over moderately high heat, stirring and scraping up brown bits, until vegetables are browned, 3 to 6 minutes. Add tomato paste and cook, stirring, 1 minute. Add wine, vinegar, sugar, and remaining teaspoon salt and 1/2 teaspoon pepper and boil, stirring occasionally, until reduced by half, 5 to 10 minutes.
  • Finish sauce and chicken:
  • Add chicken broth to sauce along with any juices from roasting pan and bring to a boil. Pour through a fine-mesh sieve onto chicken in roasting pan, pressing on and then discarding solids. Continue to roast chicken, uncovered, until just cooked through, about 15 minutes more.
  • Transfer chicken with tongs to an ovenproof serving dish and keep warm, uncovered, in turned-off oven.
  • Meanwhile, boil sauce in roasting pan over high heat, stirring occasionally, until reduced to a scant cup, then remove sauce from heat and swirl in remaining 2 tablespoons butter. Season with salt and pepper and pour sauce over chicken.

For the vinegar chicken:
2 cups distilled white vinegar
1 cup sunflower oil, plus more for frying
1/4 cup kosher salt
1 teaspoon cayenne pepper
10 dashes of Tabasco chipotle pepper sauce
1 tablespoon smoked sweet paprika
1 tablespoon freshly ground black pepper
4 garlic cloves, peeled
1 whole chicken (3 1/2 to 4 pounds), cut into 4 pieces (2 whole breasts and 2 whole legs)
For the Alabama White Sauce:
1/2 cup mayonnaise
1/4 cup distilled white vinegar
1 teaspoon freshly ground black pepper

Steps:

  • Make the vinegar chicken:
  • In a blender, combine the vinegar, 1 cup of the oil, salt, cayenne, chipotle pepper sauce, smoked paprika, black pepper, and garlic and blend until smooth. (Alternatively, you can use an immersion blender to blend the marinade.) Pour the marinade into a gallon-size plastic bag and toss in the chicken pieces. Marinate the chicken in the fridge for 12 hours.
  • Preheat the oven to 425°F.
  • Remove the chicken pieces from the marinade and pat them dry with paper towels.
  • Pour 1/4 inch of oil into a large ovenproof skillet and heat over medium-high heat. Once the oil is hot, arrange the chicken in the skillet, skin side down. The chicken should fit snugly in one layer. Loosely place a square of parchment on top of the chicken and weight the chicken down with a medium ovenproof skillet or heavy pot. Allow the chicken to cook under the weight of the skillet undisturbed for 20 minutes.
  • Take the skillet off the heat and carefully (it will be hot!) remove the top skillet (or heavy pot, if using). Flip the chicken, transfer the skillet to the oven, and roast until thethickest part of the thigh registers 165°F, 25 to 30 minutes.
  • Make the Alabama white sauce:
  • In a glass measuring cup, whisk together the mayonnaise, vinegar, and pepper. The white sauce should be thin and runny. Cover and refrigerate until ready to use. You can keep any leftover sauce in the fridge for one week.
  • Let the roasted chicken rest for 5 minutes. Arrange it on a platter. Spoon the sauce over the chicken and serve.

2 cups white distilled vinegar
2 cups water
2 sticks butter
4 tablespoons Worcestershire sauce
4 tablespoons garlic salt
2 tablespoons ground black pepper

4 chicken leg quarters
