2 whole oranges, one juiced and one sliced
1 tablespoon Italian seasoning
1/2 teaspoon paprika
1 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
Kosher salt and freshly ground pepper, to taste
10-12 pieces about 4 1/2 lbs. bone-in chicken parts, (thighs and legs are best), pat dry
1 medium onion, any kind, thinly sliced
1 teaspoon dried thyme, or fresh chopped
1 tablespoon dried rosemary, or fresh chopped
Chopped fresh herbs, rosemary, thyme, parsley, for garnish, optional

Steps:

  • Preheat oven to 400 degrees F.
  • In a small bowl whisk together olive oil, garlic, sugar, lemon juice, orange juice, Italian seasoning, paprika, onion powder, red pepper flakes, and salt and pepper.
  • Place chicken in a rimmed 13-in. x 9-in. baking dish. Place parts skin side up and spread them out evenly in the pan. Pour olive oil mixture all over chicken, turning pieces to coat all sides. Sprinkle all over generously with thyme, rosemary, salt and pepper.
  • Bake uncovered for about 1 hour, or until chicken is cooked and juices run clear. Remove parts to a serving platter and garnish with additional chopped fresh herbs, if desired.

Tips:

  • Use fresh oranges: Freshly squeezed orange juice adds a bright, citrusy flavor to the dish that can't be matched by store-bought juice. If you don't have fresh oranges, you can use 1/2 cup of bottled orange juice and 1/4 cup of lemon juice.
  • Choose the right herbs: The herbs in this dish play a key role in adding flavor and complexity. Use fresh herbs whenever possible, and choose herbs that you enjoy the taste of. Some good options include thyme, rosemary, sage, and oregano.
  • Don't overcrowd the pan: When searing the chicken, make sure not to overcrowd the pan. This will prevent the chicken from cooking evenly and will also make it more likely to stick to the pan.
  • Cook the chicken until it is cooked through: Use a meat thermometer to ensure that the chicken is cooked to an internal temperature of 165 degrees Fahrenheit.
  • Reduce the sauce until it is thickened: The sauce for this dish should be slightly thickened and flavorful. Reduce the sauce over medium heat until it has reached the desired consistency.
  • Serve the chicken with rice or vegetables: This dish is traditionally served with rice, but it can also be served with vegetables or your favorite side dish.

Conclusion:

This chicken with orange juice and fresh herbs is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of citrusy orange juice, fragrant herbs, and tender chicken is sure to please everyone at the table. Serve it with rice or vegetables for a complete and satisfying meal.
