One summer on a trip to visit our friends on Vancouver Island, they made this dish for us that they found in a Greek cookbook. It was so incredibly tasty that I had to bring it home with me. My family loves the carrots so much that I always put a few extra in the pan.

Tips:

  • Use a high-quality chicken: A good-quality chicken will make all the difference in the final dish. Look for a chicken that is fresh and has a good amount of meat on it.
  • Don't overcrowd the pan: When searing the chicken, don't overcrowd the pan. This will prevent the chicken from cooking evenly.
  • Cook the chicken until it is golden brown: Sear the chicken until it is golden brown on all sides. This will help to lock in the flavor and prevent the chicken from drying out.
  • Use fresh lemon juice: Fresh lemon juice will give the dish a bright and tangy flavor. Don't use bottled lemon juice, as it will not have the same flavor.
  • Add the basil at the end of cooking: Basil is a delicate herb that can easily be overpowered by other flavors. Add it at the end of cooking to preserve its flavor.

Conclusion:

This flavorful dish is perfect for a weeknight meal. With its simple ingredients and easy-to-follow instructions, it's sure to become a favorite. Serve it with rice or potatoes and a side of vegetables for a complete meal.
