4 boneless skinless chicken breasts, pounded thin to 1/4 inch
1/8 cup seasoned bread crumbs
seasoning salt
cooking spray
4 pieces Laughing Cow cheese
4 pieces lean ham (or prosciutto)

Steps:

  • Preheat oven to 400.
  • Spray 13x9 with cooking spray.
  • Place one piece of cheese and one piece of ham in each chicken breast and roll jellyroll style.
  • Secure with toothpicks and coat with bread crumbs.
  • Place seam side down in pan.
  • Sprinkle with seasoning salt.
  • Bake for 35-45 minutes or until done.

I could not find the Chicken with Laughing Cow cheese; so I made this one up by myself. My adult children loved it. I hope you do too. BTW-I did find the laughing cow one online & it uses ham. I was trying to make this especially healthier and did not use ham, but one could use it if desired. Enjoy!

1 c trader joe's just almond meal-or finely grind almonds into a powdery state in blender or food processor
1/2 c finely grated parmesan cheese ( cannned works fine)
1 Tbsp dried oregano
1 Tbsp dried basil
4-5 medium boneless,skinnless chicken breasts
4-5 small triangles of laughing cow cheese-(i used the garlic herb)
cooking spray ( i used olive oil-but any would work)
pointed toothpicks to hold together
bottled ranch dressing- i used trader joe's-any brand will do

Steps:

  • 1. Pre- heat oven to 375 degrees-Prepare a large baking dish with cooking spray.
  • 2. Rinse and pat dry each chicken breast. Dip into Ranch dressing covering both sides.
  • 3. Place chicken breast one at a time-into a pie pan holding the dry indredients-covering both sides.
  • 4. While still in the pie pan-place one triangle of Laughing Cow cheese into the breast and roll up to keep it inside-securing with a toothpick. Place each breast into the sprayed cooking dish or pan.
  • 5. Bake for one hour uncovered- Check meat with a sharp knife to see that the juices run clear. When done, serve.

Coarse salt and ground pepper
1 large bunch arugula, (about 4 ounces), stems trimmed
3 ounces soft goat cheese, broken into small pieces
2 teaspoons olive oil

  • Preheat oven to 425 degrees. Season chicken with salt and pepper. On a clean work surface, lay cutlets flat (smooth sides down). Layer each cutlet with arugula; crumble goat cheese in the center. Starting with the narrow end, roll up chicken tightly; seal with a toothpick.
