ROASTED CHICKEN LEGS WITH JALAPEñO AND TOMATO

Roasted Chicken Legs with Jalapeño and Tomato image

Categories     Chicken     Tomato     Roast     Quick & Easy     Low/No Sugar     Jalapeño     Gourmet

Yield Serves 2

Number Of Ingredients 8

1 tablespoon olive oil
2 teaspoons fresh lime juice
2 whole chicken legs (about 1 pound total)
2 small plum tomatoes, cut into 1/2-inch slices
2 jalapeño chilies, seeded, if desired, and cut into 1/4-inch slices (wear rubber gloves)
1 small onion, cut into 1/4-inch slices
1 garlic clove, sliced thin
1/2 cup low-salt chicken broth

Steps:

  • Preheat oven to 450°F.
  • In a bowl stir together oil and lime juice. Add chicken legs and toss to coat. Arrange chicken legs, skin sides up, in a roasting pan and season with salt and pepper.
  • To oil mixture remaining in bowl add tomatoes, chilies, onion, garlic, and salt to taste and toss well. Spread vegetable mixture around chicken legs in one layer and roast in upper third of oven 30 minutes, or until chicken is cooked through.
  • Transfer chicken to a platter and keep warm, covered with foil. To vegetables in pan add broth and boil over moderately high heat, scraping up browned bits, until sauce thickens slightly, 2 to 3 minutes. Serve chicken with sauce and vegetables.

Tips:

  • Choose the right chicken pieces: Boneless, skinless chicken breasts or thighs are best for this recipe, as they cook quickly and evenly. If you prefer, you can also use bone-in, skin-on chicken pieces, but you may need to adjust the cooking time.
  • Use ripe tomatoes: Ripe tomatoes will give your dish a sweeter, more flavorful sauce. If you don't have ripe tomatoes on hand, you can use canned diced tomatoes, but be sure to drain them well before adding them to the pan.
  • Don't overcrowd the pan: When searing the chicken, be sure to give it enough space in the pan so that it can brown evenly. If you overcrowd the pan, the chicken will steam instead of sear.
  • Use a heavy-bottomed pan: A heavy-bottomed pan will help to evenly distribute the heat and prevent the chicken from sticking to the pan.
  • Season the chicken generously: Be sure to season the chicken generously with salt and pepper before cooking. This will help to enhance the flavor of the dish.
  • Don't overcook the chicken: Chicken is a lean protein, so it's important to avoid overcooking it. Overcooked chicken will be dry and tough.

Conclusion:

This chicken with jalapeno and tomato recipe is a quick and easy weeknight meal that is packed with flavor. The combination of juicy chicken, spicy jalapenos, and tangy tomatoes is sure to please everyone at the table. Serve it over rice, pasta, or your favorite roasted vegetables for a complete meal.
