1 heaping tablespoon packed dark brown sugar
3 tbsp. vegetable oil, plus more for the pan
1 lb. green beans, trimmed
1 lb. carrots, halved lengthwise and cut into 1 1/2-inch pieces
2 1/2 tsp. kosher salt
12 skin-on chicken drumsticks
1/3 c. fresh cilantro, roughly chopped
Cooked white rice, for serving
Lime wedges, for serving (optional)

Steps:

  • Position a rack in the lower third of the oven and preheat to 425˚. Combine the curry paste, brown sugar and vegetable oil in a small bowl.

1/2 cup coarsely chopped peeled fresh ginger (from a 4-inch piece)
1/4 cup plus 1 tablespoon safflower oil
1 tablespoon cumin seeds
2 teaspoons black or brown mustard seeds
1/2 teaspoon ground coriander
1/4 teaspoon ground turmeric
1/4 teaspoon cayenne pepper
1 whole clove
2 tablespoons tomato paste
4 cups low-sodium chicken broth
3 fresh curry leaves (available at Penzeys) or 2 dried bay leaves
3 pounds bone-in chicken thighs, skinned
1 1/4 pounds kabocha or butternut squash, halved, seeded, peeled, and cut into 1-inch pieces (5 cups)
