CHIPOTLE CREAM CHICKEN

My picky boyfriend always eats seconds of this. It's like enchiladas without the tortillas. Serve over rice -- we like to serve with yellow rice or Mexican rice. You will want something to soak up all the delicious sauce.

Time 50m

Yield 4

Number Of Ingredients 13

¼ cup all-purpose flour
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon ground black pepper
1 pound skinless, boneless chicken breast halves - cut into bite-size pieces
1 tablespoon olive oil
½ cup diced onion
½ cup chopped green bell pepper
1 tablespoon butter
¾ cup low-sodium chicken broth
2 chipotle peppers in adobo sauce
½ cup sour cream
¼ cup chopped cilantro

Steps:

  • Place the flour, garlic powder, salt, and black pepper into a large plastic bag. Close the bag and shake a few times to mix the seasonings, and drop in the chicken pieces, a few at a time. Shake the bag to coat the chicken with seasoned flour.
  • Heat the olive oil in a large skillet over medium heat, and cook and stir the onion and green pepper in the oil until the onion is translucent, about 6 minutes. Stir in butter, and allow to melt. Add the seasoned chicken to the skillet, and cook and stir until the chicken pieces are browned on all sides, about 10 minutes.
  • Increase heat to medium-high, and pour in chicken broth; stir in the chipotle peppers with adobo sauce. Bring to a boil, and reduce the chicken broth by half, stirring often, about 10 minutes. Remove from heat, stir in the sour cream to make a smooth sauce, and sprinkle with cilantro to serve.

Categories     main-dish

Time 50m

Yield 4 servings

Number Of Ingredients 12

4 (5-ounce) boneless, skinless chicken breasts
1 cup blackening spice (recommended: Paul Prudhomme's Chicken)
2 tablespoons extra-virgin olive oil
3 tablespoons minced garlic
1 cup roughly chopped marinated sun-dried tomatoes
1/4 cup white wine
3 cups heavy cream
3/4 cup grated Parmesan
1 teaspoon sea salt
1 teaspoon freshly ground black pepper
1 pound cooked fettuccine
1/2 cup sliced scallions

Steps:

  • Preheat the oven to 350 degrees F.
  • Dredge the chicken breasts in the blackening spice and place in a cast iron skillet over very high heat. Blacken both sides of the chicken and place in the oven for 10 minutes, or until internal temperature of chicken reaches 165 degrees F on an instant-read thermometer. Slice in strips on the bias and set aside.
  • In a saute pan over medium heat, add 2 tablespoons of extra-virgin olive oil. Add garlic and lightly caramelize. Then add the sun-dried tomatoes and the chicken slices. Deglaze the pan with the white wine. Add the heavy cream, increase the heat to a simmer, and reduce the cream sauce by half.
  • When the cream sauce is to desired consistency, stir in 1/2 cup Parmesan, salt, pepper, and pasta.
  • Nest the pasta on large rimmed plates, pour sauce over pasta, and garnish with scallions and the remaining 1/4 cup Parmesan.

Tips:

  • To make the chipotle alfredo sauce, start by heating butter in a saucepan over medium heat. Once the butter is melted, add the minced garlic and cook until fragrant, about 30 seconds.
  • Stir in the all-purpose flour and cook for 1 minute, or until the mixture is golden brown. Slowly whisk in the milk and bring to a simmer. Reduce heat to low and let simmer for 10 minutes, or until the sauce has thickened.
  • Remove the saucepan from heat and stir in the grated Parmesan cheese and chipotle peppers in adobo. Season with salt and pepper to taste.
  • To cook the chicken, heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for 5-7 minutes per side, or until the chicken is cooked through.
  • To serve, spoon the chipotle alfredo sauce over the cooked chicken and sprinkle with chopped parsley.

Conclusion:

This chicken with chipotle alfredo sauce is a delicious and easy-to-make meal that is perfect for any occasion. The chipotle peppers in adobo give the sauce a smoky and slightly spicy flavor that is sure to please everyone. The chicken is cooked to perfection and the sauce is creamy and flavorful. Serve this dish with your favorite sides, such as pasta, rice, or vegetables.
