Super comfort food, but kinda healthy because it has broccoli in it, right? My grandmother passed this chicken and Cheddar recipe down and it is a family favorite. After the first time I made it, I went on a casserole kick and made it twice a week for 3 months straight! I typically serve this over rice, but it is just as great by itself. Last time I didn't make rice, but served it with bread.

3 cups cooked shredded chicken
2 cups cooked chopped broccoli
2 (10.5 ounce) cans condensed cream of chicken soup
½ cup sour cream
1 pinch ground black pepper to taste
2 ½ cups shredded Cheddar cheese
1 ½ cups bread crumbs
¼ cup salted butter, melted

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).

3 thin chicken breast cutlets
salt and ground black pepper to taste
3 wedges spreadable garlic and herb cheese (such as The Laughing Cow®), softened
1 cup frozen broccoli florets, thawed and finely chopped
¼ cup shredded sharp Cheddar cheese
8 toothpicks, or as needed
1 ½ tablespoons all-purpose flour
½ teaspoon paprika
1 tablespoon olive oil

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Pound chicken cutlets to 1/4-inch thickness between two pieces of plastic wrap. Sprinkle both sides of cutlets with salt and pepper. Set aside.

2 skinless, boneless chicken breasts, cubed

2 cups low-sodium chicken broth
Kosher salt and freshly ground black pepper
3/4 cup shredded sharp Cheddar
4 cups medium broccoli florets
Cooking spray
3 cups frozen brown rice, thawed
1 rotisserie chicken, skinned, white and dark meat shredded (about 4 cups)
1/2 cup grated Parmesan

Steps:

  • Preheat the oven to 400 degrees F. Put the flour and broth into a large saucepan and whisk until the flour is dissolved. Place the saucepan over medium heat and whisk continuously until the mixture comes to a boil; continue to whisk until the mixture is thick enough to coat the back of a spoon, 10 to 12 minutes. Remove the saucepan from the heat and whisk in 1 1/2 teaspoons salt and 1/2 teaspoon pepper. Add the Cheddar and whisk until melted. Add the broccoli florets and stir to coat.
  • Spray a 3-quart flameproof casserole dish with cooking spray. Toss the brown rice and chicken in a large bowl. Pour the broccoli-cheese sauce on top and mix well. This is a tried and true recipe I've made for years and one of my favourites both for ease and very few dishes to wash. It's also a family favourite and it is time to get it written down so I don't forget how to make it :). Even my non-broccoli kids will eat this one. It's really lovely served with egg noodles.

15 ml extra virgin olive oil
3 chicken breasts
3 garlic cloves, minced
sea salt, to taste
fresh ground pepper, to taste
284 ml cheddar cheese soup
125 ml chicken broth
250 ml broccoli florets
125 ml swiss cheese, shredded
80 -125 ml half-and-half cream (optional)

Steps:

  • Sprinkle both sides of chicken breasts with sea salt & fresh ground pepper.
  • Cut chicken into strips or cubes, your preference.
  • Preheat a large heavy fry pan or electric fry pan to medium high.
  • Heat oil in pan, lightly brown meat, remove from pan (I use the lid of my electric fry pan, it's deep enough and less dishes too :D ).
  • Saute minced garlic for approximately 2 minutes.
  • Add chicken broth to pan (you can substitute milk for a lower fat content) and deglaze chicken bits from bottom of pan.
  • Add can of cheddar cheese soup and stir well.
  • Stir in chicken pieces and broccoli florets (if using frozen, thaw broccoli and save until last 5 minutes of simmer time).
  • Reduce heat, cover pan and simmer for 20 minutes, stirring occasionally (remember to add the thawed broccoli after 15 minutes if using frozen).
  • Uncover pan, increase heat to medium, stir in shredded swiss cheese and cook an additional 5 minutes, reducing sauce. You can also add 80- 125 ml (1/3 to 1/2 cup) of half an half at this point for a creamier sauce).
  • Serve over noodles or rice.

4 boneless skinless chicken breast halves
1 (10 3/4 ounce) can broccoli cheese soup
1/3 cup water
1/8 teaspoon ground pepper
3 cups broccoli florets

  • In a skillet, over medium heat, melt the butter, then add the chicken breasts & cook 10 minutes, browning the meat on both sides.
  • Spoon off any fat.
