FRIED CHICKEN

Fried Chicken image

Marinating the pieces in buttermilk is the key to moist, flavorful fried chicken.

Provided by Alison Attenborough

Categories     Chicken     Deep-Fry     Picnic     Fry     Dinner     Buttermilk

Yield 4 servings

Number Of Ingredients 11

1 quart buttermilk
3 1/2 pound chicken parts (bone-in, skin-on; if using breasts, halve)
2 cups all-purpose flour
1 tablespoon paprika
1 teaspoon cayenne pepper
1 teaspoon garlic powder
2 teaspoons kosher salt
Freshly ground pepper
Peanut oil, for frying
Special Equipment
Deep-fry thermometer

Steps:

  • Place buttermilk in a large, shallow nonreactive dish and add chicken. Cover and refrigerate for at least 2 hours or overnight.
  • Combine flour, paprika, cayenne, garlic powder, salt, and pepper in a large plastic bag.
  • Remove chicken pieces from buttermilk and add to bag with flour mixture. Shake to coat; dust off excess.
  • Pour 3/4" peanut oil into a heavy skillet. Heat oil over medium-high heat until it registers 350° on a deep-fry thermometer. Reduce heat to medium and add the chicken pieces, a few at a time. Fry each piece for 10-12 minutes, turning occasionally, until it is crispy and golden and internal temperature registers 165° on an instant-read thermometer. Drain on paper towels; serve.

Tips:

  • Use a variety of breading options: Panko breadcrumbs, cornmeal, flour, and crushed crackers are all great options for breading chicken wings. Experiment with different breadings to find your favorite.
  • Season the breading well: Use a combination of salt, pepper, garlic powder, onion powder, paprika, and cayenne pepper to season the breading. You can also add other herbs and spices to taste.
  • Double-coat the chicken wings: Dredge the chicken wings in the seasoned flour mixture, then dip them in the egg wash, and then coat them in the breadcrumb mixture. This will help the breading stick to the chicken wings and create a crispy crust.
  • Fry the chicken wings at a high temperature: This will help the breading brown quickly and create a crispy crust. Fry the chicken wings in batches so that they don't overcrowd the pan and cook evenly.
  • Drain the chicken wings on paper towels: This will help remove any excess grease from the chicken wings.

Conclusion:

Crispy, juicy chicken wings are the perfect party food. They're easy to make, and they can be enjoyed by people of all ages. With a variety of breading options and dipping sauces to choose from, there's a chicken wing recipe out there for everyone. So next time you're looking for a delicious and easy appetizer, give chicken wings a try.
