CHICKEN WILD RICE SOUP
I got this from a Quick Cooking magazine and it has become a favorite. If you have leftovers, you may need to add additional water when reheating because it gets pretty thick after it is refrigerated. 3/5/10--I went back and looked at my original recipe. I tweaked this by upping the veggies, and I probably use more chicken as Hokies suggested. I usually am pretty sloppy with my measurements on this one, so feel free to add more than the one cup!

Tips:
- Use high-quality ingredients: Fresh, flavorful ingredients will make a big difference in the taste of your soup. Choose organic vegetables when possible, and use free-range chicken or turkey.
- Don't overcrowd the pot: When adding the chicken, rice, and vegetables to the pot, make sure there is enough room for them to move around. Overcrowding can prevent the ingredients from cooking evenly.
- Simmer the soup for at least 30 minutes: This will allow the flavors to meld and develop. The longer you simmer the soup, the more flavorful it will be.
- Season the soup to taste: Once the soup is finished simmering, taste it and adjust the seasonings as needed. You may want to add more salt, pepper, or herbs.
- Serve the soup hot: Chicken wild rice soup is best served hot. You can garnish it with fresh herbs, shredded cheese, or a dollop of sour cream.
