24 ounces cheese tortellini
2 cups broccoli florets
2 teaspoons olive oil
2 chicken breasts, cut into bite-sized pieces
1 teaspoon onion powder
½ teaspoon kosher salt
¼ cup unsalted butter (half a stick)
2 cloves garlic, minced
¼ cup flour
2 cups milk (I use 2%)
1 cup shredded parmesan cheese
1 cup shredded mozzarella cheese

Steps:

  • Boil tortellini in a large pot of water according to package directions. Add the broccoli to the water during the last minute of cooking. Drain tortellini and broccoli and set aside.
  • In the same pot, heat olive oil over medium high heat. Add the cut up chicken breast, salt, and onion powder. Cook until slightly browned and cooked through, about 8 minutes. Remove from pot and set aside.

1 can (15 ounces) tomato sauce
3 fresh thyme sprigs

1 bay leaf

1 rotisserie chicken, skin removed, shredded
