Steps:

2 tablespoons ground cumin
2 teaspoons garlic powder
Kosher salt and freshly ground black pepper
1/4 cup olive oil
1 1/2 pounds boneless skinless chicken breast, cut into 1-inch pieces
2 bell peppers (red, yellow or orange) cut into 1/4-inch pieces
1 small onion, diced
1/4 cup all-purpose flour
One 14.5-ounce can low-sodium chicken broth
4 ounces cream cheese, cut into pieces
One 14.5-ounce can black beans, drained and rinsed
1 cup frozen corn kernels
1 1/2 cups Mexican blend shredded cheese
80 frozen potato tots, such as Tater Tots (from about one 32-ounce bag)
Guacamole, sour cream, mild salsa and cilantro, for serving, optional

Steps:

  • Preheat the oven to 425 degrees F.
  • Combine the chili powder, cumin, garlic powder, 1 teaspoon salt and a few grinds of black pepper in a large bowl. Heat the oil in a large ovenproof skillet over medium-high heat. 2 teaspoons minced garlic
¼ teaspoon celery seed
1 pinch ground black pepper to taste
